2 lbs burger
3-4 teaspoons salt, to taste
Pastry crust:
6 cups all-purpose flour
1 tsp salt
2 1/4 cups (1 lb, 2 oz) shortening of choice
12-16 tablespoons ice water (or enough to make cohesive dough)

Have you read the book ,Along the edge of America, by Peter Jenkins ? I think you would enjoy it.
Maga rant by the dude that carries on about abiut the socialist goverment infastructure that allows him to do the loop. I certainly dont hear you whine about the locks running for only yourself every single time you use them while you beg for dog food.. I guess i am done with channell. Hypocrite, also maga morons whine about literally everything-idiots.
Yeah seems more restaurants are doing the tip thing. Is what it is.
I do want to choose the tip depending on how good the service is. If I have to remind to refresh my drink that is not good for the tip
Keeping it a choice would be preferable.

tiny life tips ! high strength alcohol in spray bottles for all insects , one set on mist to cloud a room to expel flying squadrons , one set on stream for long distance sniper shots , i use magnetic door screens & a large bed mosquito net , alcohol is a great degreaser for clean up etc !

In a cold bake, when do you start the baking time? Is it once you put the oven on or when the the temp has reached 350 degrees ? Can the top be buttered?

Hi Nancy, my bread turned out good but on the dense side. This could be because I added rye flour as well, and a tiny amount of sugar. The dough felt sorta stiff to work with but that could be the rye flour. I did a cold bake but that didn’t seem to make the loaves rise much at all. When I bake normal yeast bread I always preheat the oven to 350 and the loaves rise a lot more, I have a convection oven and maybe that’s part of the difference. The bread still tastes delicious! ❤. Next time I’m only going to use all purpose flour and see if the dough is more stretchy.
Thanks for the update! You should be able to use up to one cup of the flour per loaf without impacting the texture. One cup of rye flour especially should actually improve texture. There are so many factors that can influence your bread's crumb and texture that it's difficult for me to theorize. Do you have a healthy, active starter? The cold start is simply an alternate baking method; I don't think it would have a huge impact on oven rise one way or another, and your convection oven shouldn't make a difference. But it's impossible to compare sourdough and yeast breads--they're entirely different "animals." I'm glad your results were delicious, even if dense. I hope you will keep trying! :)
I’m from Canada and I’m not sure if I’ve ever noticed automatic tipping. Something I will closely watch for. I prefer to tip on a debit machine or cash in some instances. We don’t eat out often as I make homemade everything, even canning in the fall. I don’t agree with all the charges, everything is so expensive these days as it is. Stupid restaurants, I’m surprised they have any business at all being so tricky and gouging peoples wallets!
I printed off your recipe and will make the the dough this evening. I love your channel and this very informative video. I normally mix the dough by hand and mixing tools such as a scraper and Dutch whisk. Tonight for an experiment, I’m going to mix it in my Bosch mixer. I was just wondering why you don’t score the tops of the loaves as this prevents the bread busting out on the sides. I may do 3 without scoring and 1 scored just to see the difference in the end result. I love how down to earth you both are, it was a joy watching ❤❤❤ from Saskatchewan Canada!
Thank you! I don't score my sandwich loaves. I kind of like the way they look with the tops rising up during oven spring. Just a personal preference. 😊 As long as the loaves are proofed sufficiently before baking, they don't blow out the sides, but rather lift up. I do score my free-form hearth loaves. I would love to hear how your bread and experiments work out!

How is your recipe different than others that are formed and baked in a Dutch oven? Is there a ratio of stater to flour? I have 1000 GM do flour with 200 GM of starter raising on the counter right now Excellent video!

This sandwich bread is baked at a lower temperature and doesn't have a free form shape. Because of the difference in baking method, the sandwich bread will tend to have a more uniform crumb and softer crust. The recipe, including the ratio of starter to flour, is in the description. Happy baking! 😊

There’s a variation on this theme I want to try called a Bedfordshire Clanger, although there’s some disagreement over whether that name applies to what I’m describing. This is very similar to your pasties but there’s a division partway down, most of the filling is savory but at one end you have a sweet, like jam or fruit.

Grew up across the lake - north shore Minnesota. We used to get these from the local grocery store. I think they came from Michigan. Pasties with ketchup... soul food 👍

Pasties are a big deal here in Nevada County, Ca. The Cornish miners used them to take into the mines and the locals love them. Every Christmas I would take a dozen to my late sister who moved to Sacramento. Sadly there is only one place that still sells them in my town. But they have been here for many, many years.
@Lannynetz the upper peninsula of michigan has iron ore mines! An island that's a copper mine! Very large finnlandish population !
@@JamesFoster-z9s In Nevada County it was deep gold mining. Not anymore, My Dad worked in the Empire and the Idaho Maryland mines. He said the depression never touched here because of the gold mines.

When I lived in Montana, I discovered that many Cornish miners moved to the Butte/Anaconda areas when copper mining in the UP dried up. Lots of pasties there. It's interesting to see the "trail" of pasties across the country!
We lived on cumberland island ga. It’s now a national seashore. We had a life estate for my husbands life so I had to leave 12 years ago when he died. No bridges, stores, mail, etc. it’s a hard life down there. Lots of very long not docks. Most little towns have city marinas you are welcome to tie up your dingy to go to stores etc. some youd have to go down a river a little ways off ICW. I just found your channel. Im curious because I found it from the pasties video. Wondering about then and now and where you from etc. looks like a fun trip!

Looks great! BRAVO! 100 diff pasty recipes out there, but after more than a half century as a lover and sampler of said delicacies across the UP of Michigan, a pasty without onions and rutabaga is missing 1/2 of the flavor. Make em the way you like them though… we all have different palates.
Nancy, you just have to have a great meat loaf recipe.!! I think the miners in Yorkshire took a similar meal into the mines? Looks if Wavey has a new treat? :-)
