Bacon Wrapped Jalapeno Chicken on the SnS Kettle

    I just got one of these and made ribs last weekend and had a hard time regulating temperature - I kept having to readjust the vents. From looking here I made the mistake of putting the lit Charcoal on one end instead over the top. I'm going to try a shoulder next - did you wrap after a certain amount of time or was it at a temp of the pork? Thanks!

      @@jeaninem7281 lighting from one end probably would be fine but I would probably light the middle. When it comes to Temperature management on a kettle Grill. Sometimes you have to go with whatever temperature it wants to run at. Also be patient between adjusting. It is normal for the temperature to fluctuate. Not a big fan of a long wrap I think I wrapped this one around 175 to 180 basically for the last hour of the cook. Hope this helps. Thanks for watching. Let me know if you have any more questions?

For smoking - do you leave the bottom vent closed? Thanks so much!!

      @@jeaninem7281 sound about right. It was also cold out then I would say 1/4-1/2 open on bottom and half on top. With any kettle cook give yourself plenty of extra time. A long rest is a good thing. And just go for a grate Temp of 225-300 just roll with wherever it wants to run at

    You can accomplish the same thing with a small hotel pan for the water and 2 disposable aluminum containers flattened for the indirect heat. All for under $10.00 cheers

    As a new kettle owner if you could only get one accessory would it be the SnS Deluxe or the firebaskets? for a mix of quick cooks and slow cooks

      @@SamWorley93 I would say definitely get the slow N Sear deluxe. Fire baskets are great for hot and fast but if you want to Cook things like pork butt or beef ribs the Slow N Sear is good to hold more fuel

    Be careful how much you have. Most bacon you buy are processed, and processed meats have additives. The issue is that the durring high temp cooking the additives form compounds that are known carcinogens. Over consumption of these cause many different cancers. Be safe, do your research, and enjoy in moderation!
