I love how despite being very introverted, avoids unnecessary interactions and even pushes everyone around him far enough away as to not form an emotional attachment to them but also keep them close enough so that they’re useful;

Goblin Slayer does care deeply about his friends in his own way. He is simply incapable of expressing affection or emotion properly due to his PTSD and and ever-burning desire for vengeance. As for which girl actually has a chance with him, Cow Girl is the closest thing he has to a significant other since she has made a home for him to return to after every mission and the Slayer is closer to her than any other person. Goblin Slayer has never considered what will happen when his days of slaying eventually come to an end, but it's implied that Cow Girl will be there waiting for him and he would stay with her.
That sounds pretty wholesome to me, chief.
On the other hand, priestess is also there with him while he slaughters goblins, making herself useful as well as being a friend. Cow Girl may have the advanatge of how long she has known him for and the home situation, but I could see him hooking up with the priestess simply because she has been there for him and alongside him ever since he saved her life.
You referred to him as 'the Slayer' and my mind immediately went to the clip from one of the DOOM Eternal trailers, "WARNING: THE SLAYER HAS ENTERED THE FACILITY".

In the Manga, Guild Girl actually asks Goblin Slayer out on a date. But it got spoiled when that guy she demoted and banned from the town tried to attack her, and Goblin Slayer ended up killing him.

I wonder if guild girl still likes goblin slayer as much as she did before? When goblin slayer took that guy out he played dead to trick him. She thought he was dead and strted crying. Slays the competition!
There's good points to him having the different girls in his "harem":
- Cow Girl keeps him grounded and gives him a reason to come back, as his goal of protecting her as the last vestige of his lost childhood drives him to return and keep her safe.
- Priestess brings out the positives of his job and reminds him of the good that can be done without falling into the darkness.
- Elf Archer encourages him to adventure for fun and sport, not just to dwell on his obsessions that spiral him into deeper and darker holes.
- Guild Girl challenges him to use his experiences to guide new adventurers and fulfill social roles within the Guild that doesn't rely solely on killing goblins; there's a chance Guild Girl could get him to run a training school for new adventurers where he can help guide them through their first goblin-killing missions alive and provide pointers to train newbies better.
After how this series started, that "chance" would be a good thing for newbie adventurers to take a chance on.

You're pretty much spot on with this observation. His character development will actually be a plot point in the second season of the show (depending on how much the second season will cover). Goblin Slayer is deeper than one might expect

If you don't know Japanese you are missing out on some stuff... when he says "thanks" for the letter he's actually saying something like "sorry for troubling you", and when his childhood friend says he has a lot of "friends" she uses 'nakama', which can be understood as either friend or comrade (like brother-in-arms) and the "joke" is that she meant it as the former but he probably answered as if he understood the latter.
He only thinks about Goblins, but at least he protects the girls the best he can. And don't you dare mentioning his sister. Ò_Ó

The only time i enjoyed the "harem" trope. Rather than some weird love circle, or each girl having a "cooky" trope. Each of them plays a huge role in keeping goblin slayers humanity.

He’s a knight so he walks in a heavy cool way with all that armor on.
His harem isn't the typical harem we've become accustomed to, NOT ALL OF THEM are there for a combat role. One's a secretary and another a farm hand. Also, the most important part, he has MALE FRIENDS that actually take prominent roles in the story. This is the most "natural" harem I've ever met.

Fun Fact: The way the Dwarf Shaman refers to Goblin Slayer in the original Japanese version is, "Kami - kiri - maru," which actually means "Hair-cutter," not "Beard-cutter." Why this change was made is unclear, but I suppose this way the comedic tone stays despite the translation.
