  • I am super excited to show you how to make the creamiest hummus ever! After just one try of my Homemade Hummus with Za'atar Pita Chips recipe, you will never go back to plain old hummus. The not-so-secret secret to creamy hummus is removing the skin from the outside of the chickpeas. The extra five minutes to remove the skin is totally worth the effort! It results in a really creamy hummus that is so delicious.

    Want even creamier? Process the tahini and the lemon juice by itself first. Then add a little water. Trust me. It’s an emulsification like mayo. It makes way smoother hummus. Then add the rest of ingredients.

    Add cumin, it brings out the flavor and gives the hummus a little more zing. I also like to put papikra on it when it’s served

    Try it next time with adding few ice cubes in the food processor. The final result will be even tastier and its has more of a creamy texture.

      Thanks for the tip! I've used iced aquafaba (or ice water if I forget to retain some of that) but I'll definitely give ice cubes a try.

      Yes, after years of making hummus I've found that adding chickpea water is a must for a creamy delicious humus :)

    U can add the following to make it even better,
    1 Tea spoon of salt
    1 table spoon of yogurt (for softness & buttery taste)
    Add olive oil after on top of humus after u finish the blend, not during blending,
    Add fresh parsley with the blinding or if u like on top of humus after blinding,
    Add some sprinkling of sumac on top of humus after blinding,
    Add some sprinkling of cumin on top of humus after blinding.

      Whats the difference of blending together the olive oil with the rest of ingredients, and blending all the ingredients first before putting the olive oil..other use sunflower oil? Which is better, olive oil or sunflower oil

    I always drizzle a few tablespoons of ice cold water in the last few seconds of the hummus purée. It’s an old Israeli Arab technique

      @@mattportnoyTLV different groups? not really, more than 80 % procent of the arabs in israel identify themself as palestinians. All of the muslim in israel and majority of christians arabs identify themself as palestinian, its only the druze who dont do it.
      Palestinians in Israel, west bank, gaza, refugee camp in Lebanon and syria are all the same. We speak the same accent, have same culture and come from the same area.

    Do you have a recipe for falafel,? Love to eat with tabula i think that's how you spell it and hummus and pita. Going to try to make your pita recipe.

    If you out some baking soda in the chickpeas and cook them in a skillet, then rinse the skin comes off in a bowl of water just rub with your fingers and the skins float right off. Check this method out at America's test kitchen. If you want smooth hummus you must remove the skins! Great recipe. You are very young, amazing how well you cook. Keep up the great work. I subscribed. Can't wait to see your other dishes. Do you have a recipe for baklava? I have a very old one from Greece. Would love to see how others make it.

    You should sprout the hummus first, that is how you get rid of the skin. Then you blend the hummus and gradually add stuff to it. you shouldn’t add olive oil in the mixing, it’s a strong flavor and it will literally ruin the dish, to make it creamy you have the tahini’s fat content just add it gradually and add according to taste. Let talk about the serving, never put it In a bowl! You should use a flat plate to spread it evenly and then add the olive oil on top. And the zatar. Please don’t put it on hummus, it is an overkill . Try putting little bit of sweet paprika, or cumin on top . And it’s better to eat it with some soft peta. I repeat it’s not a dip.

      No. Its Hummus all over the Middle East. Khummus is for people of european background who cant pronounce Hummus. Hummus is an arabic word.

    Za'atar is the best hurb for humus!
    And if you have stomach ache or throat pain. Make a Za'atar tea with the fresh herb and some honey. So good!

      @@rashajouhar3613 lol original za'atar is the plant which in Hebrew is known as 'Esov', found in the wild in Israel, Lebanon & Syria. It's recorded in our Jewish literature from 3000 years ago as part of our way of life, various medicines made with it etc. Lebanese (Phoenician Canaanite roots) also have the same / very similar remedies. Arabs are welcome to engage with that part of our culture, and are very welcome to call it their culture too, as they've lived in our region a long time.

FYI other Israelite plants are used in our Jewish traditions (whether Jews in the lands of exile of Europe, or of North Africa, or middle east) such as date palm leaves and other indigenous plants during Sukkot festival. Such as almonds, dates, pistachios and grape juice, in our Pesach ("Passover") festival of Spring.
      Many examples. The entire Jewish cultural heritage really is based all around Israel, and Canaanite traditions (new year of the trees, festival of the first fruits etc).
      And yes, 'esov' - please look it up, you have internet - is the original zaatar, and is core in Jewish tradition. I don't deny it's an important herb for Lebanese and others, but it's also for the Jews. I hope you at least be open to the knowledge out there, instead of insisting Jewish people are what you've decided. I'm a Jew, trust me that I know what I'm talking about, or better yet, research.

      What you don't know is that every jew in the world is or can be isreali by the israeli law the program israel government call (aliah). Too long of a story just Google it.     Nice video Eitan, to improve on your hummus (not khumus) swirl, try rotating the plate rather than the spoon, keep the spoon stationary with just enough push and rotate the plate with your hand, perfect swirl for olive oil to live in. Also try cayenne pepper and cumin (not too much cumin) as final garnish.

    Hey Dan, sometimes it's nice to ass a little greek yoghurt in combination with the Tahini... also a little cumin is good. The traditional way is no yoghurt, of course and, if you are following certain dietary laws, the diary is problematic.... I once had Hummus at a Lebanese restaurant where they added the FAINTEST and I mean faintest hint of orange zest and it was amazing. Do you have a recipe for egg and onion dip?

    Quickly boil the chickpeas and the skin comes off easier if you rub it off in the cooled water and when they’re warm, they blend easier and makes it smoother. I dont add olive oil except as garnish “Lebanese style.”

    Pressure cooked the dry chickpeas with a teaspoon of baking soda and water in the insta pot for 36 minutes in the instapot, the peas shell themselves and become soft and the shells are pulverized enough to not need removal, rinse in a wire mesh and proceed with your recipe, add pea water instead of water to the recipe.Allow the pressure pot to come to a cool down naturally too, on its own after processing the chickpea

    It is the first time I have heard of " koshar salt". Can anyone please tell me the difference in koshar and non-koshar salt ? it is sodium chloride so why differentiate into koshar non-koshar.

      It's the shape of the salt. Kosher salt and table salt measure differently. When a recipe calls for one or the other you'll need to adjust the amount if you substitute the other. Kosher salt is better for sprinkling applications than table salt because of the shape and "pinchability" but flavor wise they will both taste like good ol' sodium chloride.

    I’ve been watching hummus recipes for the past several weeks. One woman I watched swore that the hummus would never get creamy if you added the tahini before you thoroughly blended the chickpeas for at least five minutes in the food processor.

    He is saying “khummus”, that’s how they pronounce it in israel since their language is Hebrew. Palestinians, Syrians, lebanese, etc. pronounce it “hummus” since their main language. Now stop attacking the man, jeez.

      Zaatar is a mix of a typ of thyme (but regular thyme will do the job), salt and sesame. Just in case you dont get Zaatar

    Too much oil. You should use the liquid of the chickpeas cooked in. Without salt? No way! Not for me.

      If u'll use liquid of the chickpea cooked in, instead of extra virgin olive oil, i really dont think u ill get tht amount of taste nd smoothness... well its up to u

    I feel happiest around herbs, and canisters full of amazing, real, yummy, food!!!!!! The middle eastern spices and look of the slads is one of my favs. plus mexican, spanish

      But still he did his own version of khummus without being yucky as some RUclipsrs who claims to have the best hummus on Earth and they massacre one of the longest culinary in the levent time.
