Hakka Steamed Pork Belly with Taro / Yam with PERFECT wrinkle skin | 客家芋頭扣肉

  • This is a very famous dish served in Chinese restaurant, especially during Chinese New Year. The method to make is usually considered tedious / complex. However, follow my recipe as i make the steps very easy to follow and they lead you to a perfect wrinkled pork skin. Enjoy!
    (This recipe makes 4 small bowls)
    Ingredients:
    600g pork belly
    1 medium sized yam / taro
    2 tbsp rice vinegar
    2-3 stalks green onion
    Sauce:
    - 2 tbsp minced garlic
    - 2 tbsp minced shallots/onion
    - 3 pcs red fermented tofu
    - 1 tbsp red fermented tofu sauce
    - 2 tbsp oyster sauce
    - 1 tsp white pepper
    - 1 tsp five spice powder
    - 1 tbsp light soy sauce
    - 1 tbsp dark soy sauce
    - 2 tbsp sao xing wine / cooking wine
    - 1 tsp corn starch
    - 180g water
