Just a few recommendations to make it even easier. From a Mexicana that usually cooks ground beef like this with vegetables. One. No oil is required when cooking ground beef. It has its natural oils. If you want to use the natural oils to cook everything, just add very little water. . . Or Add in garlic and onions diced into meat along with seasonings as it's cooking. Let it release the natural waters and oils. You can add some if needed. Once onion and jalapenos/ chilies cook with ground beef and seasonings, then add the cabbage/veggies last.. You can do it all together and save that time. The rice would really be the only thing separately cooked other than the salsa.

Poblano pepper is being commonly used in USA due to low price, and relatively low heat (correct me if I'm wrong). You surely can use Green Bell Peppers as a substitute, and adjust heat to your liking. Cheers.

When I do the rice, I’ll put the lime juice and the cilantro in the rice cooker with the rice so the rice is flavored nicely. I’ll also add a bay leaf and salt just for a nice flavor.

If you're someone like me who's on a low carb high protein. I didn't add the meat or rice in to the pan. Instead I weighed my portions for the meat and rice to ensure I'm getting the high protein and low carb. Once I was satisfied I then started scooping in the rest and mixed them in there containers. Little effort but when the carbs in almost you daily intake...it helps 😅

I like this bowl idea here, Josh. I do have a possible suggestion regarding the cooking process of the vegetables. Now i don't know if you were going for the oil/spice immersion here because I totally understand that it definitely gives a much deeper, thicker coating, but with a beef bowl like this a little bit more richness non-spice related can be attained by just cooking the onions as well as the garlic together in the oil prior to the addition of the powdered spices. Oil - Onion/Garlic - Cooked until Caramelized - Poblano + S/P/C/P - Cabbage until wilted

I made this on the weekend. I like heat, so I put in an extra jalapeño. Turned out great. I couldn't find salsa verde at the store, so I just went with medium regular salsa. This meal is actually pretty good even without the salsa anyway. Will make it again for sure.
I don't know if this is bad or not, but I put a Pyrex container (like the IKEA ones you have in this video) into a Zwilling medium bag and suck the air out for freezing. I was going to buy the Zwilling glass containers, but they aren't really cost effective. The medium bag fits the 6 cup Pyrex container. The odd shape may cause the bags to wear out quicker? Not sure, but is okay for now.
If you have a Japanese market near you, check them out for pretty good food containers. Mitsuwa has a selection of sectioned lunchbox containers as well as traditional bento boxes. Daiso too even. They won’t be as nice but they’re still better than any US dollar store product.

After cooking. Different rice absorbs different amounts of water so I prefer to do the measurement afterward because people in the past have said when it’s measured raw they end up with too much or too little
Thank you for the meal prep recipes! It's only been a week, but I've lost 7lbs! Currently am cheating on the cooking thing by quartering a cooked chicken from Walmart, and plating it with a mushroom/eggplant/shallot/new baby potatoes stir fry mix.
I don't know how much weight you have to lose, but 7 lbs in a week is considered... extreme. Most people lose a significant amount of muscle if they sustain a near starvation level diet, which eventually slows down your BMR. Be careful

After that it levels out to something more conservative. Hopefully what @memine2022aussi is experiencing is that initial spike. As you mentioned, a consistent 7 lbs a week is not likely and takes near starvation to do.
