Less risk of it losing its shape or damaging the pan with a knife, etc. Parchment is oven-safe up to about 425F, so it should be fine here. Also, consider applying half the glaze in the last 10 minutes of baking, and the other half when it comes out.
You can also free-form the lentil loaf on a baking tray lined with parchment paper or a Silpat liner. Also, I like to pour on the glaze about ten minutes before the loaf is done.
I’m so looking forward to trying this. Meatloaf is the one thing I miss. I believe I will add some Marmite for more umami and a little hot sauce. Will use Better Than Bullion for gravy and voila! Meatloaf, mashed potatoes and gravy, mixed veggies and I’m in heaven!! Thank you so much!!

I really enjoyed this! The texture was excellent! I’m going to try it with bread crumbs next time instead of the oats. I wanted a savory taste so I used the extra mushrooms I had leftover and made a gravy for it and it was absolutely delicious 😋

First of all, this is a spectacular looking recipe and I'm going to definitely try it. I'm not a vegan or a vegetarian, in fact I hunt my own meat because I want the animals to be dispatched as mercifully as possible. I process all my own Meats and I actually don't eat that much of it. I really admire people who choose a vegetarian and vegan diet. I applaud their commitment to their conviction and their ability to be so creative. I can't wait to try this dish. By the way, I just made what I think is my favorite one till dish and I hope you try yourself. I combined mashed potatoes lentils and cauliflower and the combination was amazingly delicious. Got to play with the seasoning to get it the way you like it but it's good. There should be no reason why people with different World Views about various topics should not be able to get along and respect each other. Final note, that's not an ugly dish at all. It's probably the first one I would go to at the party

I was looking for a TVP meatloaf but this looks really good. love the addition of the walnuts. we don't use the flax egg but a ground chia seed egg works just as well. am for sure going to try this this week. and yes please keep recipes like this coming. I know especially for new vegans that getting a good rotation of recipes for dinner is always their big challenge. so whether you've been vegan for a long time, a short time or just want more meatless options, videos like this are very helpful.

Hi. Tip when working with lentils: make sure to go through them very very carefully. I missed a small stone once (garlic kale lentils) and almost broke a tooth.

Great tips! Freeform lentil loaf is always a good option if you don't have a loaf pan.
