Eggplant Lasagna l Foodie Avenue

Hello Foodies, today I baked this eggplant lasagna. This is meatless, but tastes really delicious, full of flavors indeed. It has a hint of sweetness to it, because of the spaghetti sauce that I used. But you can use plain tomato sauces, if that is what you prefer.
Here are the ingredients:
For Roasting-
1 big eggplant/ aubergine
salt and olive oil
For the sauce-
some oil
minced garlic and onion
minced mushrooms
minced carrots
minced spinach
dried oregano
salt and pepper
spaghetti sauce (I used 250 grams x4)
Needed for assembly:
mozzarella cheese
parmesan cheese
