On the days they nixtamalize the corn to make a massive run of corn tortillas, the whole parking lot smells beautiful. You really would love it, it's so very intense, and it just screams "MEXICAN FOOD!" Veronica Moreno, the woman who built the company, still runs it with her family 35 years later. Product quality across their entire offering is top-notch. I'm making this recipe on Thursday. Thanks again for all your hard work on these videos.

You guys are my favorite. After I'm done cooking I spend hours at night watching you cook and deciding what I'm going to make next. i have been making eating this , sort of, for my whole life. I have made since I was on my own and before that my mother made it. sept it was never called chimichanga It was made with corn tortillas and called green chili chicken enchilada casserole. ( But i like Black olives in it. LOL but still the chimi is the flour and fried tortillas. I will do this one next. I still have left overs from sat for the last enchilada one I made. but today is TUESDAY! lol i gotta do something beef and my sister is coming over bringing salsa and chips salsa grown in her garden! its the best. I have to do something to match it. I still have a bunch of chilies and i also have some red chilies cooked down. I think I will make beef version of this and chicken next time. for now im going to bed though. LOL way too late. Thanks.

I made an adaption of the recipe using jackfruit in place of the meat and I used Violife vegan cheese because too much dairy gives me too much gas and I would be blowing it up for days. I skipped out on the sour cream and used Media Crema. It was delicious! I also made it vegan using homemade cashew cream and the violife vegan cheese. Came out 💣!! Thank you for the inspiration ❤
