Everything looks yummy! Quick tip my grandmother taught me. To give your chicken soup stalk a nice color, wash your whole onion, with the skin still on. Cut the root tip off, slice into four pieces and throw into the stock. The onion skin helps to give your chicken soup a nice yellow color.

Oh, you are not kidding. I strip the meat from the chicken to make a number of meals, then make a quart or two of broth, freeze some, use the rest for soup. My son encouraged me to do this, this is what he does. Raised him well

That would include steaks almost always, or some type of seafood, and while it was you and far between if you save during the week you can Splurge for a weekend treat
We did this menu/meal plan and loved it! Our favorite was the chicken fajita skillet, using black beans instead of pinto, and using the fire-roasted Ro-Tel with Hatch Chiles. So delicious! When I took leftovers for lunch, I packed an extra handful of chips, since the ones on the dish aren't microwave friendly 😂 Mo chips, mo better. I love this idea of putting together a meal plan with no waste and budget in mind - such a good idea to have up your sleeve for anyone!
Made all 3 recipes from costco rotisserie chicken. Followed recipe. The stuffed shells were amazing. The fajita casserole was delicious but didnt care for the tortilla chips on top. I will skip that next time and serve with warm tortillas on the side. This taste better the next day. Soup was great. Nice and light and the lime juice was a nice touch. Highly recommend all 3. recipes.
Been using rotisserie chickens for years. Especially during the hot summer months. Great for cold salads and sandwiches. But, have learned to use my gas grill to prepare most any dish without adding heat to the house. I vac and freeze the bones for stock and soup in the winter months. Thanks for the recipes.
Got my first Costco chicken in a bag today. Of course it’s the same chicken but you don’t get the juices like you did in the plastic container. That stuff made decent gravy! Don’t throw the skin away! You can crisp it up in a pan and use it to top whatever you make!

Your recipes are easy to follow and economical. I buy a Costco chicken every week. I always save the gel, adding to a plastic container I keep in the refrigerator. When it's time to make a gravy or some chicken pot pie I add the gel to the broth and it adds a rich flavor.
I need that shirt!!! Absolutely perfect -- but I'm impressed that a white sweatshirt survived extreme pasta sauce use with no splashes, splurts or spots. Also, need very much more ricotta cheese mix. When I make my lasagna cheese, it's loaded up with 6 or 7 varieties, and sometimes spinach, too. (I also use that cheese mix for cheese toast AND puff pastry appetizers -- no leftovers!)

I made the Chicken Coconut Soup last night using some leftover balsamic chicken tenders. Five Stars!! Being single, I cut it down to a small batch but it was soooo good I wish I hadn't. The added bouillion is a great tip... Loved the freshly grated ginger in the base. I put a little kale in at the end for more color with a pinch of chili pepper flakes and topped it with my personal preference Sambal Oelek in place of Sriracha. It was perfect! I wish I could post my picture... Thank you so much for this recipe. KEEPER!
Oh my gosh the stuffed shells were amazing! I had leftover baked chicken and used it to make the shells. I didn’t use as much Alfredo and mine was from the jar but still delicious! Bonus was adding the hatch chili on top for a little kick! Will definitely make this again!
i do this the same for the soup making,can't beat the flavor you get. I keep it simple just rice and peas. you can add more veggies,but i like it simple and easy.
Rotisserie chicken here in Canada is smaller. All our chicken is leaner. So I would have to probably use 2 chicken. Love the easy recipes. My boys can learn them quick!

I cook lots of rice cool on sheet pan then to the freezer in 1 1/2 cup portions. Easy to add to dishes casseroles and soups

You should always wash your mushrooms. There is a lot of the soil they are grown in on them. Usually you would cook them and the water cooks out.
