Besides the recipes, which are always good, I watch these videos for Nicole. I love, love, love her voice. Wouldn’t it be fun to cook with her in your own kitchen? She’s such an all-American, “girl next door.” I need her for my bestie. Like me, I think she likes to eat as much as she likes to cook!
I'm 56 and my friend is 93. I always tell people, to make friends with older folks, they are absolutely the best to be around. My friend has me cracking up all the time and I love hearing her stories
@@jeanineskitchen2607 I like the title. Every once in a while when the kids were growing up I would serve a $10 meal, and then we would have a $50 meal. That would include steaks almost always, or some type of seafood, and while it was you and far between if you save during the week you can Splurge for a weekend treat
Been using rotisserie chickens for years. Especially during the hot summer months. Great for cold salads and sandwiches. But, have learned to use my gas grill to prepare most any dish without adding heat to the house. I vac and freeze the bones for stock and soup in the winter months. Thanks for the recipes.
Amazing.. that stock looks like liquid gold!! I am definitely making that stuffed shells recipe and the chicken fajitas one, after labor day BBQing lol
Simply GENIUS! We get these Costco roasted chickens and most times half or more goes in the garbage because it doesn't get consumed....that's about to change thanks to you. Thank you! 👏👏👏👏
i do this the same for the soup making, can't beat the flavor you get. I keep it simple just rice and peas. you can add more veggies, but i like it simple and easy.
I made the Chicken Coconut Soup last night using some leftover balsamic chicken tenders. Five Stars!! Being single, I cut it down to a small batch but it was soooo good I wish I hadn't. The added bouillion is a great tip... Loved the freshly grated ginger in the base. I put a little kale in at the end for more color with a pinch of chili pepper flakes and topped it with my personal preference Sambal Oelek in place of Sriracha. It was perfect! I wish I could post my picture... Thank you so much for this recipe. KEEPER!
Got my first Costco chicken in a bag today. Of course it’s the same chicken but you don’t get the juices like you did in the plastic container. That stuff made decent gravy! Don’t throw the skin away! You can crisp it up in a pan and use it to top whatever you make!
Rotisserie chicken here in Canada is smaller. All our chicken is leaner. So I would have to probably use 2 chicken. Love the easy recipes. My boys can learn them quick!

@@allrecipes How much chicken per person is there in these recipes? If you have a large family, you might need two chickens, not one.
I love Nicole! Fun, relatable, and easy recipes that even a novice cook can try. I’ve been watching all her previous episodes.

You've done it again. Kuddos Nicole. Please keep these fantastic recipes coming. Blessings and prayers...
I cook lots of rice cool on sheet pan then to the freezer in 1 1/2 cup portions. Easy to add to dishes casseroles and soups
I buy two at a time and take all the meat off and freeze portions for use later. Also freeze the carcasses for soup later. Win win!
Wonderful dishes today. That dish for Taco Tuesday will be a hit with the family. However, that spinach Alfredo, wow!
Nicole to the rescue! We are having the Chicken Fajita skillet casserole tonight for supper!🎉😊
Brilliant in this day and age. Reminds me of Quick Fix meals with Robin Miller. One staple (chicken) 3 meals. More of this, please.
I remember $10 dinners from milissa dearabian, still have her book, lol, good stuff

Oh my, delicious!
Bravo Nicole!
You should always wash your mushrooms. There is a lot of the soil they are grown in on them. Usually you would cook them and the water cooks out.
Hahaha, Nicole, more bang for your “cluck!” 🤣 Roscoe and I use our Robot Pot to make our chicken stock. You go old school, that’s good too.
I love making fajitas with the Costco chicken❤
Thank you.
These all look delicious-thanks!
🎉
Wish our Costco chiken was 5$! Lolll
Yay living in Québec Canada
Looks yummy 😋
Love them❤
Unfortunately here in Canada, we pay $11 for a Costco rotisserie chicken, so 3- meal ideas are very nice
Anyone ever tried the shells recipe with marinara instead of Alfredo?
Great idea!
What could be used as a substitute for the coconut milk? Everything looks really good!
I made the taco/fajita one today. 👌🏽
Can we also make these recipes with home-roasted chickens?
WOOMAN, What do you have for us now😍🥰
Fantastic video
You are my favorite!!!
In Canada, Costco's rotisserie chickens are $7.99.
What can I use instead of Alfredo?
she fire
⭐️
The skin has served its purpose??? I thought it was for people who don’t like chicken! 🤣🤣🤣. That’s the best part!
Could you use cream cheese instead of ricotta or cottage cheese
Can you make these freezer meals and pull them out and bake later?
What are these pots you’re using? They’re so pretty…
Can you use another oil? I like coconut in sweets, but not in savory dishes.
Free your mind, you can figure it out. ✨️
I want potatoes soup ....
