My mother used to make this (with some slight differences). Of all of her dishes, this was always my favorite. Although I was present on many occasions, I never thought to write down the recipe. Because she passed before my step-father, her recipe box was lost to me. I never thought I would have the chance to taste this dish again. Until now. I can never thank you enough for sharing this.
Tina, I feel for that recipe box loss, my stepdad did that too. Mom loved to cook, shared the passion with me as a kid. She started a project, spent months entering them on her "new" computer back in early 2K, proudly telling me months later, she threw the paper ones away because she had her computer for me. I was devastated a few months after she passed, when he said he got rid of the "stupid" computer, he was only playing solitaire on it. He then was devastated too, when I just sat down looked at him, what about her recipes? He never gave it a thought and was so sad he took them from me to prepare for all of us again. I hope your stepdad just had a never gave it a thought moment. I know how mangy my old recipe box looks, but since Mom, my whole family knows better than to toss anything accumulated with love like that.

When my step-dad died just over a year later, everything went to my step-brother. I got a phone call a year later from his wife telling me that she had come across a box of memorabilia that had a lot of things that my mother had saved through the years of my report cards, drawings, etc. and would I like them? My step-brother and I have never gotten along and the same was between me and his wife. I reminded her that my mother was in her 40's when she met my step-dad and that there were probably a lot of her possessions that I would like to have other than that box. She ignored that comment and asked for my address so that she could send it. Before she could, my son talked to her about maybe getting some things of his that was also in the house at the time of my step-dad's passing. There was also bad blood between them, so that didn't go well. After that, she even denied sending me that box. I got absolutely nothing from them. Everything my mother had; her jewelry, things she had bought over her 78years, gifts I had given her, gifts my son had given to her, all of those things... just gone. Of all of the things they took, her recipe box was the loss I felt the most. It's silly how when it comes right down to it, it's the little things that mean the most to us.

I grew up with that dish except we didn't put potato or carrot in, but more veggie is always good. I will try it! So glad you shared this recipe, I have been wanting to recreate it and watching you brought it back to my mind.
My mom taught me also how to make it and it was exactly like the way your mom taught you. But I now make it exactly the same way except instead of sauteing the chicken. I boil the chicken and use the water or broth from the chicken and I don't use any oil at all because of our age now we really can't afford to be eating food with oil in it. When she would make this dish for us, she would serve it with fresh homemade pinto beans, and she would do the same thing put butter on her corn tortilla every now and then on her flour tortillas as well. When she would make this dish for us, she would serve it with fresh homemade pinto beans, and she would do the same thing put butter on her corn tortilla every now and then on her flour tortillas as well. Your recipes and your cooking always hits home cause it’s how our mother used to cook for us, now I cook the same way. Don't give away your molcajete, keep it until you can't cook anymore. Molcajete is very expensive today. Gone are the three dollar ones at the Mercados.
