    2 lbs 80/20 ground pork
    4 Tbsp ice water
    3 Tbsp fish sauce
    1 Tbsp vegetable oil
    2 Tbsp sugar
    1 Tbsp potato starch
    1/2 tsp ground white pepper
    3/4 tsp baking powder
    6 banana leaves cleaned, approx. 14 inch x14 inch • Preparing Banana Leaves
    Yields: 2 rolls, approximately 1 lb each

    If I don't have access to banana leaves, how could I make this pork roll recipe successfully?

      Since I don't have access to them either where I live I'm going to try it with extra layers of oiled parchment paper and then the plastic wrap.

      @@dreeemer i made it that night basically substituting the banana leaf with parchment and made sure to oil the innermost one. I folded the ends just like she did as well and double wrapped in plastic wrap and it worked like a charm! I found for my stove top I had to steam in medium heat for almost 40 minutes until the loaf was firm.

    Hi, Thanks for posting. I have a meat grinder so I can grind my own Pork Shoulder. I'm wondering if I ran my meat through the grinder a second time with a smaller die before I mixed it, could I skip the multiple Food Processor steps?

    I know tradition calls for banana leaves but I've seen it done without and simply using the cling wrap and parchment paper with twine.

    Made your beef balls and they turned out great but the pork roll didn't get chewy and crunchy at all. More like steamed meat rather than pork roll. The texture also wasn't smooth like yours. Any tips for what could be wrong? Thanks!! (They taste really good though!)

      The technique for making a "crunchy" pork roll is very similar to the beef meatballs. The crunch comes from processing the meat when it's cold and not letting it get warm. Also, if you can ask your butcher to double grind the pork, this will lighten the work load for your food processor and help to get a smoother texture. Try making smaller rolls, processing less meat and see if that works out for you. Good Luck Amy!

    Tasty, balanced recipe and easy-to-follow format. Your instructions regarding the freezing and pulsing method was spot-on which resulted in the intended springy texture.     Perfect time to try this recipe since we are having a natural freezer at the moment, it's -10 degrees C here. I will give it a try and if it turns out well, which I am sure it will, I will make bánh dầy too. :)

    yum! I love eating cha lua with pickled carrots and daikon dipped in nuoc tuong va ot ^.^ But do I have to use banana leaf? It is hard to find it in my town.

    However, I am not a fan of using lots of plastic wraps, especially in steaming/heating up process, both for health and environmental reasons.

    I remember my mother buying steam pork rolls in the Asian store, now that I am grown I cant find any Asian store around where I live. Now I have a great chance on making it for me and the kids to enjoy as I when I was little boy. Great video and instruction on how to make it.

    Chi Trang, em lam cha lua theo cach chi chi. My cha lua has not that " white" kinda color like yours. It's brown, but it taste delicious though ☺

      Hi Thanh, the brown color may be a result of the meat combining with the air. Did you buy the meat and use it right away or store it in the refrigerator for a day or two? A slightly brown color does not affect the taste em. Great job!

    Ben em phan nhieu supermarket or butcher khong ban ground pork. I can only get ground pork at 1 supermarket but they have only like 4 packages of 300 gr. I need to always call them to set aside if I'm gonna make cha lua 😄😄. But chi Trang can I maybe use mixed ground pork/ beef for the cha lua. Mixed groud pork/beef is easier to buy

      If your mixer is powerful enough, it would work. Food processors usually have a bigger blade and stronger motor so better equipped for processing meat into a paste. Good Luck!

      Keeping the meat cold is what yields the slightly crunchy texture. If you skip this, you may get a pork roll with a very soft, somewhat mushy texture.

    Thank you so much for detail video instructions. I just made it and after cutting it in half I noticed my steam pork roll isn't as white. Mine has more of typical ham color look. Did I undercook it? Steamed it for 40minutes

      +Alvin Wong Hi Alvin, for this recipe, either single or double-acting baking powder will work just fine. In this recipe, I use double-acting.

      Hi sis, just add the pork skin during the 10 seconds when combining both batches in the food processor. This way the skin doesn't get all chopped up. Enjoy!

    How long are they good for after freezing them when they're made?

      Wrap them well and you can freeze for 3-4 months.

    If I use parchment paper or foil do i still use to horizontal vertical pattern?

      No need to lay any special way if using parchment paper or foil. The placement for banana leaves is to strengthen the leaves so they don't tear when wrapping.
