- Famous Black Sea Trabzon Dishes You Should Know! We are making traditional 3 dishes from The Black sea Trabzon. "Kuymak"; "kaygana" simple egg dish and kale (black cabbage) rolls "Lahana sarması" (the written recipe: www.turkishfoo... ) in a beautiful old Konak house "Lermioğlu Konağı" with home cook Zeynep who cooks for the cafe.

Ingredients For Stuffed Kale, Black Cabbage (Collard green) sarma (rolls)
2 medium-size onions
5 tbsp olive oil
2 cups rice
2 tbsp tomato paste
about 1 tsp each salt, black pepper, hot red pepper
1-2 tsp dried mint
enough kale, black cabbage green leaves (cooked for about 5 minutes until soft enough to roll)
For the sauce:
1 tbsp tomato paste
1 onion (sliced)
enough water that doesn't cover the top. (about 1 cm less)

Merhaba! Thanks for sharing this recipe! I have lived and worked in Trabzon for almost a decade and Kara Lahana Sarma is one of my favorites! Most English dictionaries give kale as the translation of Kara Lahana, but Americans call it "collard greens". Hopefully getting the correct leaves will help in reproducing this delicious recipe! Thanks again!

Marhaba! My mother used to make a similar dish to "Kuymak" when I was young but I don't remember what she called it. This brought back good memories of those times. I really enjoyed this video!

Hello from Greece! I just love your country, as a matter of fact I was born in Izmir. We have so many in common especially in food. We have an egg and tomato dish called kayana and of course the dolmas and the baklava and so many others. I just wanted to add that the Pontian Greeks who used to live in the Black Sea area have a very similar dance. The Greek word for dance is HOROS so it is very possible that it is a loan. Anyhow I enjoy your videos, so keep up the good work 😘

The kuymak looks like a dish we do in the Middle East. It’s called mamounia. We use simid (semolina) instead of the corn flour and string cheese. It’s a breakfast dish but we add sugar to it (I didn’t see her adding sugar). First we boil the sugar with the water and boil it for one minute and add it to the simid, then we add the cheese until it’s thickened. I personally like to spread some toasted pine nuts on top of it when serving.

Horon / Χορό(ν) = Greek word for dance. Trabzon and wider Black Sea region has a 3000-year-old Hellenic heritage.

Most people there are still Greek ethnic but they just been Turkifice and converted to Islam, if you do a DNA test to the population i won't doubt it more than 50% of them have Greek blood. The last Byzantine Dynasty came from Trabzon and one of Trabzon royal family married a Turkish Sultan so technically the Ottoman were half Greek descent and still a Byzantine dynasty lol
