The derived animal fat is called Tallow in english . In our local language , it is called laat (lard) used in kebabs(kofte)and meat curries(karahi)in the cuisine of north western province of Pakistan. This province is close to Afghanistan and its believed that the cuisine has borrowed from central asian and turkish influences .
