  • Turkish Egg Cilbir or "Çılbır" as we say in Turkish is one of the best and simple egg dishes you can make. www.turkishfoodtravel.com/202... It is famous from Ottoman times, from the 15th century. Simple ingredients like yogurt, garlic, red pepper flakes "pul biber" and butter turn into a feast with this traditional Turkish cuisine recipe.

    Ingredients For Cilbir: (For 3-4 serving)
    4 eggs
    1 liter of hot water
    2 tbsp apple or grape vinegar
    about 1 cup or more thick plain yogurt
    2 cloves of garlic (optional)
    For the red pepper sauce:
    2-3 tbsp butter or 4-5 tbsp olive oil
    1+1/2 tsp pul biber (red pepper flakes) or less depending on your taste
    dried mint (optional)

    for anyone who is going try this: make sure to add garlic to the yogurt otherwise its never the same. as a turk i cant imagine this dish without the garlic. because the difference will be huge.

      We have yogurt in India as well since ancient time and Ayran also which is called buttermilk...its is part of our staple indian diet

    5 yrs ago i couldn't have imagined eggs with Yougurt, but once u try it people, you will question your existence that why didn't you taste it before lol. Its super yummy 😍

    Cilbir is one of my all-time favorite egg dishes! I love it with lots of minced garlic in the yogurt. Sometimes when I'm lazy and don't feel like waiting for water to boil, I will "poach" the eggs in oil in a pan over low heat, spooning the hot oil over the eggs to cook them evenly. After the eggs are done, I will use the same oil to make the pepper sauce.

    Very nice recipe! In Bulgaria we have the same, but in the yogurt base we add white feta cheese, parsley and garlic! 💝💝💝

      The Turkish version generally uses Greek Yogurt (which basically tastes the same as regular yogurt + feta) and minced garlic. Additionally, parsley is finely chopped and mixed in olive oil which is drizzled over the yogurt
      I think, all in all, they're the same. Just the procedure varies

    My favourite sunday breakfast! I usually add a little salt to the yoghurt and finish everything with a sprinkling of fresh dill on top. Love it ❤

    Oh, Aysenur, I am travelling on this amazing food travel for some time already. You are a great guide. I did try quite a lot of your amazing (and wonderfully presented recipes - carniarîc being my all time favorite) recipes (some of them were already adopted by the Romanian old cuisine since… forever!).       Very late and a bit presumptuous-- first crush the Garlic clove with salt and then add the yoghurt makes a world of difference to the taste.
