Assalamo alaikum. Beautiful dish sister. We have beautiful food in Afghanistan, but Turkish food equally occupies a special place in my heart. Ramadan kareem.
Regarding the khochaf we don’t cook the dried fruits. We use “bestil” as a base soaked in water overnight, then we add the dried fruits: apricots, prunes, raisins and nuts: walnuts, almond, pine nuts and green pistachios (optional) with some cinnamon sticks or cinnamon powder and let it soak again overnight, and it’s ready. This is a Christmas tradition. Regarding the soup, my mom used to boil the “itchly keofte” in water and use the broth for this soup. Regarding the “perde pilaf” I make it with puff pastry for an easier version, and make decorations with the dough that were cut off from the sides. I don’t turn it upside down. Well, I can if I want to by taking it out carefully with two big spatulas into the serving plate. It was nice watching you cook Aishenur. Too bad I cannot eat gluten, dairy products and grains like bulgur which is a much used grain in our cuisine.

I made the perde pilav for the first time and it turned out spectacular! A small tip that helped, I had to freeze the butter for 30 min it was too runny when I used the fridge and the almonds wouldn't stick.
It looks so delicious, but i can't eat as i am vegetarian, but i am sure it must be delicious, it will the other desserts and sweet dish too. Thanks for sharing your wonderful dishes.
