On a recent whistle stop to London last week, I was excited to finally get to C&D and sample their cupcakes (cereal flavor) and pick up the tea towel/mug from the shop. The display of all the cupcakes was so tempting! The staff were really friendly and helpful. I even got to meet Jemma herself (I did interrupt her, she must have thought I was a total nutter...sorry!) and jumped at the chance to ask her about some of the bakeries she visited with John Kanell from 'Preppy Kitchen' (Check out the video on Cupcake Jemma and Preppy Kitchen) It was really helpful because I only had one afternoon and was flying back the next day....So glad I visited, it's well worth it if you find yourself in the area...best cupcakes in London!
Oh my goodness. I made this last night, doubled the brownie and pie crumble recipe, made it gluten free (for my coworkers) and then 1.5 times the meringue, put it in a 9x13 pan. Made a bittersweet butter ganache and put a thin layer over the cooled brownie, let it set then added the meringue and drizzled more chocolate over that after torching the meringue. Let me tell you, this recipe is AMAZING!!!
If you can, try one! They’re very easy. It’s graham crackers, or digestives, a piece of chocolate and a toasted marshmallow sandwiched together. Look it up. So sticky but delicious!
This looks so good! Could you make this in advance say for a dinner party? If so how long would it last fully finished? This info would be incredible useful in the video 🤞🔥
You can totally make this in advance for a dinner party! The pie Crumb can be made well in advance and kept in an airtight container & the brownie base can be made a week or so beforehand and frozen - in terms of the finished brownie pie I'd recommend doing the italian meringue on the day of serving for the best results but it can be done the morning of!

Am I the only one that thinks the Italian meringue to brownie ratio looks wrong? It looks like far to much meringue to me. I also have never made or had Italian meringue before so I don't know the flavour profile but it just looks like to much to be able to enjoy it with the brownie.
It looks a lot like the pies by UK bakers Get Baked, based in Leeds. They have high meringue toppings on pies, it's very light consistency compared to the dense pie fillings/bases, so having tried a couple of those I would say the ratio works!!

I live in Scotland and I always end up having quite a lot of the sugar syrup remain in the pan as it crystallises really quickly. Do you have any tips to help me? I usually just do a Swiss meringue instead. Cheating I know but I’ve tried four or five times and it has never worked! Cheers, Mandy

You can use white corn syrup like Karo but glycerin is quite easy to find now.

Italian meringue is SO silky smooth and delicious, it compliments the brownie just right!
