  • Welcome back to another round of Cupcake Jemma Cooks The Books! This time it's the turn of Ruby Bhogal, whose book "One Bake Two Ways" gives us a plant-based alternative for every single recipe - hit the link to grab a copy www.waterstone...

    For the Tangzhong
    40g strong white bread flour, sifted
    100ml soy milk
    For the Dough
    110ml lukewarm soy milk
    7g fast active dry yeast
    80g caster sugar
    400g strong white bread flour
    50g cocoa powder, sifted
    6g salt
    220g unsweetened apple sauce
    120g plant-based unsalted butter (block)
    maple syrup to glaze
    For the Cherry Compote
    500g amarena or maraschino cherries (or a combo of cherries and strawberries!)
    plus 3tbs syrup from the jar
    squeeze of lemon juice
    For the Filling
    500ml plant-based double cream
    50g icing sugar, sifted
    2 tsp vanilla extract
    Icing sugar to finish

    Seeing Jemma in baking mom mode is so reassuring- I always get so frazzled when my daughters want to help (pour half the ingredients on the floor)

      She’s not the most reliable taste tester, since anything sweet is ok by her, but she LOVED these!

    I make compotes with frozen fruit - it's often cheaper to get frozen cherries than fresh, and you can get dark sweet ones from some shops which cook down really well.

      Yeah I always have frozen fruit in my freezer and you’re right it cooks down better in some cases x

    I'd thought I'd seen all the baking hacks, but putting a sealing bag clip at the end of the piping bag to prevent a mess is brilliant! Definitely doing that next time I bake.

    Cool looking book, nice to have vegan options. Not seen vegan whipping cream here in NZ (presumably exists in vegan stores, but I'm not vegan so who knows). I have my own recipe for vegan whipped cream that took a couple of days to perfect, but it's so so good virtually indistinguishable from the genuine article (and unlike the many recipes on the internet for this is both a good substitute and actually consistently reproducible) - much better if someone else has already done the research like for the book here!

      You should check out my pal School Night Vegan (Richard Makin). He has a really great recipe for homemade vegan cream. It’s literally just deodorised coconut oil, soy milk, icing sugar and vanilla.

    The short rest in the mixer is just a little fermentolyse. Honestly I'd give it 20-30 mins if mixing in the KA Artisan to give gluten development a little kick-start and reduce kneading time (would use fridge chilled or ice water to control temp if making bread that needs relatively intensive mixing in an Artisan, honestly the Artisan is pretty useless for bread and I rarely use it for bread/doughs these days and make almost all by hand).

      Also KitchenAid instructions you not to go over speed to when kneading dough with any of their stand mixers. I know some of their bigger stand mixers have a spiral dough hook I don't really know if that makes a difference because I don't own one. You can get aftermarket spiral dough hooks for the Artisan.

      @@robertknight4672 The spiral hook does make quite a difference. The bowl lift models are much better for bread between the spiral hook, ability to take a larger batch of dough and more power to handle lower hydration doughs or intensive mixed doughs. If you want to make doughs in the Artisan then an aftermarket spiral mixer is a good idea.

      always real butter for buttercream! margarine and spread are too soft

    missed the perfect opportunity to say it BLACK FOREST MARITOZZI , get it? cause its chocolate cheery and whipped cream? no? i mean ? we could ? use some chocolate flakes to make it more accurate?

    Can I use gluten free flour?

      I wouldn’t try to substitute that here as it’s a recipe designed with gluten in mind. If you’re looking for great GF recipes though check out Becky Excell and The Loopy Whisk because that’s what they specialise in x

    I will try the recipe with real milk and fresh cream and grass- fed butter and not the plant-based products which make people sick.

      Ok, I’m not sure that PB products make people sick, since there are many people enjoying them and living their best lives BUT if you want to make the non PB version check out the book because it’s not a like-for-like swap x
