Oh my gosh I’m imagining the tastes of browned butter and cream cheese frosting combined. I’m definitely going to try this!
I made this cake yesterday, and I am impressed. The cake is moist and dense like pudding but feels like cake, and the frosting may as well be magic. The browned butter and fresh squeezed orange juice soften the sourness of the cream cheese, and make it so much better without losing the classic cream cheese frosting flavor. I took my time beating the butter, then the cream cheese, then the sifted powdered sugar. I am so glad I had a nice, sweet orange to squeeze on hand. I must have beat the cream cheese a full 4 minutes before adding the sugar, and I made sure the sugar was well blended before adding the vanilla and oj. When I assembled the cake, the layers wanted to slide a bit, but I inserted a drinking straw in the center to hold it steady while it chilled in the refridgerator.
The only dried fruit I had on hand were raisins, which I chopped into tiny bits before adding them. They worked fine for this recipe, but I am so pleased with the cake, I must try it with apricots and cherries next time. I suspect they will enhance the cake's flavor in a way similar to the oj in the frosting. This is the best carrot cake I have ever tasted, and I cannot thank you enough for sharing the recipe.
Gluten free baking can be a challenge, but I have no choice. It seems my gluten intolerance grows more senstitive with each passing year, and I'd like to eliminate it altogether from my family's diet. I had such a tough time giving up bread and, especially, cakes, despite the way my system responds. Gluten is hard to break with, mostly bc the taste and texture are so hard to match. I have tried many, many recipes, and have kept few. This one is absolutely a keeper. You've inspired me to give one of your bread recipes a try. Thank you!

Glad I came across this video which led me to the recipe, my mom turned 56 today, and I wanted to make her cake from scratch, it turned out pretty much perfect, only thing I wish I did different what to not do so fine of carrot shreds I there was only the texture of the coconut LOL, wish I had chopped fruit but a substituted for raisins since that's the way she would usually do it.

Looks great! Browned butter makes everything better! Any tips on how to bake this in a 9 x 13 pan? How long? What temperature?
Same temp. I would start checking at the same time, but you may need to add 10 minutes to the bake time (but keep checking because everyone's oven is different).

Looks amazing! Can I ask if you've ever used your gluten free four blend to make a roux? I used a store bought brand and it didn't work for me. I'm wondering if there's anything that will get as red as flour for a gumbo base.
I always use cornstarch for my roux making and it works great!
