They look absolutely stunning and remind me very much of the curry puffs I used to buy at certain Asian outlets in Australia. Unfortunately I have not seen them here in NZ (though we seldom buy takeaways - and then only fish and chips). I have subbed and I'm so looking forward to exploring your interesting channel. Many thanks and Kia ora from NZ.

I had once heard a well known Chef calling curry powder a disaster considering the diversity of flavours our country has. We in India don't understand what this really is. Perhaps, It comes in handy when abroad and more suitable for the western audience considering their pallette.
For the flavouring part, sky is the limit. Sambhar podi /channa masala too perhaps. Middle eastern mixes too are amazing. Depends the kind of zing one wants to lend. Chetna, your thoughts will be much appreciated.

Read somewhere that coconut oil is a good replacement for egg wash for savory foods, such as these aloo puffs, whereas the almond milk method works better for sweets. I have never tried coconut oil in this role, though, and thus cannot vouch for it.
