Today I'm going to show you how to make moist lemon pound cake.
This healthy lemon pound cake is lower in sugar and fat, and much lighter than traditional recipes.
It's a no fail recipe, everybody can make this cake.

LEMON LOAF CAKE RECIPE
Ingredients:
1.5 cups ground oats or oat flour (150g)
1 cup spelt flour (125g)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp melted butter
1/4 cup unsweetened applesauce (65g)
1/2 cup maple syrup, honey or agave (120ml)
3 large eggs
1/4 cup lemon juice (60ml)
1 tbsp lemon zest
1/2 cup Greek yogurt (120g)
NUTRITIONAL INFO (per slice):
157 calories, fat 4.2g, carb 25.1g, protein 5.3g
Preparation:
First combine the dry ingredients, ground oats, spelt flour, baking powder, baking soda and salt.
For wet ingredients in a bowl add the butter, sweetener and applesauce, and whisk to combine.
Add three eggs (one at a time) and whisk until fully combined.
Add the lemon juice and lemon zest, and stir in the Greek yogurt.
Pour the batter into a lined loaf pan and smooth the top.
Bake at 350F (180C) for 50-60 minutes. Let it cool for 10 minutes, then transfer on a wire rack to cool completely.
Optional: when cooled brush the loaf with honey lemon glaze, just combine the juice of half of the lemon and 1-2 tsp honey.

I baked it and had already 2 slices of it. It looks nice and risen. The taste is very good and not too sweet. I used only 2 eggs which went well. I highly recommend this lemon loaf cake. Thanks for sharing your recipe.

Hello. I just want to say thank you for this delicious recipe! I did a little twist to the ingredients and it came out super delicious! I did not have spelt flour so I added sugar free lemon pudding about half a cup and instead of adding butter I added coconut oil and two eggs instead of three eggs. And I baked it in a Bundt cake mold. My delicious cake came out so moist. Thank you again for this delicious recipe! Take care! Greetings from California ❤
Thank you for the recipe. I baked it and used all oat flour as I hadn't the spelt one and it turned out perfectly. I used 15 ml of coconut oil in set of 2 tbsp of melted butter. It was absolutely delicious.

I just made it last night, and since I didn't have yoghurt on hand, I sub it with milk. My oh my . It turned out incredibly yummy !.I also added roasted nuts on top ! My fave part is the lmon+ honey glaze which made it taste more refreshing n lemony ! Btw, I used my rice cooker since I haven't got an oven....☝️ ! ThNks so much for sharing this healthy recipe. By the way, the ingredients’ list in the description says 60 ml of sweetener but in the video it (correctly) says 120 ml 👍

Many thanks for these healthier recepies. I am wondering with what I should replace apple sauce with butter or oil and whether I should do 1:1 replacement? In general, I am not having a homemade applesauce and dont want to skip a receipe for only one ingredient. Thanks in advance
Hi there! Glad you like the recipe. Well, if you don't have applesauce, yes you can use butter, let's say extra 2-3 tbsp, but I would rather go with extra Greek yogurt instead.

Thanks Micheal! Yes, you can use whole wheat flour too, and this thing with mayo, it's just interesting to me, not really sure about the results, let me know about it if you give it a try.
You can use dairy free plain yogurt. Just let it drain in a coffee filter placed inside a strainer. That will make it thicker like Greek yogurt.

Hey Sasha, whenever you use spelt flour in recipes, Im assuming this is white spelt flour right?
Hi there, yes most of the time it's white spelt flour, but I do use whole spelt flour too, it just gives me the better color of my baked goods, so I prefer it that way in my videos.

Sometimes I do use some gluten free flours such as rice flour or coconut flour, but not without oat flour in the mix. I just make sure I always keep my pantry stocked with oats:)

Hi there Miriam! I use regular oat flour, or better say regular ground oats all the time, not exactly certified gluten free, and I think both will give you the same results, because it doesn't really rely on some gluten in traces.

You could always try and use Aquafaba. I have tried other recipes of this channel with Aquafaba instead of eggs and it worked, although this recipe calls for quite a large amount of eggs so it might not be suitable. Maybe just cut the recipe in half and give it a try?

Yes, you can skip the starch part and use just oats. For homemade oat flour I just grind my rolled oats in coffee grinder, that's all.

Hi Carol! Yes, maybe it's in the pan size, but also make sure you use large eggs, it will add to the volume more than using smaller eggs, and this spelt flour it's white spelt flour, not whole spelt flour. Hope it will turn out bettter for your next time.
