- Mild Madras curry powder is a spice blend commonly used in South Indian and Sri Lankan cuisine. Here's a recipe to make Madras curry powder at home:
Ingredients:
3 tablespoons coriander seeds
2 tablespoons cumin seeds
2 teaspoons mustard seeds
1 tablespoon fennel seeds
1 tablespoon black peppercorns
1 tablespoon fenugreek seeds
1 bay leaf (cut into small pieces)
2 teaspoons turmeric powder
2 teaspoons paprika powder
2 teaspoons Kashmiri chilli powder
Method:
Dry roast the coriander seeds, cumin seeds, mustard seeds, fennel seeds, black peppercorns, and fenugreek seeds in a pan over low heat until fragrant and slightly browned. This should take around 2 minutes.
Remove the spices from the heat and let them cool.
Once cooled, transfer the roasted spices to a spice grinder or a mortar and pestle and grind them into a fine powder.
Add the turmeric powder, paprika powder, and Kashmiri chilli powder to the spice mix and give it a good stir.
Store the Madras curry powder in an airtight container in a cool and dry place. It can be used for up to 6 months.
You can adjust the quantities of the spices to your liking to make the Madras curry powder more or less spicy. Enjoy your home-made curry powder
