This is great - as an expat in Hong Kong (10 years) it was my regular... my staff used to laugh at gwielo liking this so much... but good food is good food! (Can use "golden syrup" instead of maltose (similar but slightly different taste (I think)) Thanks for the video - your instructions are good!
Don’t you think it would be better to put it on a baking rack instead on a tray so the heat can also circulate all around the meat ? It is just a suggestion as I still have not tried to make the char siew . One of my favorite dish here in South East Asia .
I would recommend you try both ways because it depends on a lot of things, such as your oven, the cut of meat used, the texture of the finished char siew you like, etc.
I tried longer oven time too, and the char siu was too dry. In my experience, the oven temperature, oven time, and meat thickness all affect the final result. The combination in this video gives the best result for me.
I tried a lot of recipes but this is the best. I never like any of my charsiu before because it smelled strong like chinese medicine, dry and taste not good. Can I use air fryer for high heat at 400F instead use convention oven 536F? because I feel very nervous every time I turn the high heat at convention oven. It's smoke and vapor badly inside and it come out from the oven. Looks scary.
I have not use air fryer to make char siu because I usually make a large batch every time. 400F is not hot enough in a conventional oven to get the meat cooked quickly to make them tender inside. I don't know if 400F is good in an air fryer.
@@COOKSTACEYCOOK I only use air fryer 15 minutes to replace 536F at convention oven but after that I will use convention oven for 350F in your recipe. Air fryer is a lot hotter than convention oven. I will find out if I can use 500F in air fryer. I have the combo Air fryer. Thank you.
Looks delicious but i`m not a fan of the egg in there, pretty sure we can leave it out, my experience using egg is loss of flavor, or a to dominant egg flavor that pushes the other seasoning away.
