hey the rice needs to be mushy and mashable for south indian food, not like basmati rice for north indian dishes, it makes a lotttt of difference in taste and texture ❤ p.s. okay i saw that the 'rasam' isn't even rasam so fuck the rice lol

Rasam powder (compulsorily HOMEMADE) - 3/4 spoon 2. tomato - 1 3. turmeric 4. curry leaves - 4-5 in the first step, then another 4-5 in the last 5. salt 6. tamarind paste- 1/2 spoon (mother's recipe brand is the best) 7. tuar and moong daal - just 1-2 spoons of cooked daal and daal water 8. Coriander leaves chopped 9. Mustard seeds 10. jeera seeds 11. ghee -1 spoon 12. oil- 1/2 spoon (or even less) 13. Asafoetida •boil/cook daal in a cooker and set aside 1-2 spoons of it along with some daal water. •Blend the tomato and curry leaves in a mixer or if you want bites of tomato slice them or cut them into small pieces(totally your preference). Remove the green raw part of tomato with a knife. • Boil all the ingredients from no. 1-7 in 3-4 cups of water and cook on low flame. •when the mixture froths up, add the cooked daal • then when it froths up again, add the coriander leaves, and a tadka made of ingredients 9-13 •dont stir after adding the tadka, just close the lid and turn off the flame, the flavours will get infused deep. I personally ENJOY the crunchy jeera tadka floating at the top. Ingredients for rasam powder 1. tuar/arhar daal - 1 cup 2. Whole coriander seeds - 1/2 cup 3. Dry Red chilli - 10-12 4. Kashmiri/bedgi Red chilli (any colourant chilli) - 10 5. Jeera seeds - 1/2cup 6. Pepper - 1/3 cup 7. sundried curry leaves (optional) 8. Mustard seeds - 1/2 spoon for shelf-life •put the red chilli at last, as it can burn easily •First tuar daal, and when it's fragrant, add saabut dhaniya and so on. • blend all the above in a mixer and you're done. this will last you 2-3 months easily.
