@Meko Michelle Not to sound condescending, but Im speaking to you on a higher level of consciousness that many people in our community (who aren't actively studying other cultures) won't understand.
The truth be told, Nigerians (and Africans/Caribbeans in general) do NOT view Black Americans as their brethren, they view us as ENEMIES because of their culture of tribalism....hence why so many of them call us "Akatas", and actively come to the United States intentionally trying to UNDERMINE us and our reparations claim, and assist our oppressors (until they inevitably turn on them)
So when you say "we were robbed from our roots", I will just say YOU HAVE YOUR OWN CULTURE!!!
Black Americans have their own culture (despite what AFRICANS say), we have our own food, lingo, music, struggles, history etc and never forget that.
That being said, Nigerian food is pretty good, they definitely know how to throw down in the kitchen I'll give them their props.....but leave it at THAT

Here’s a tip for added smokiness… hot charcoals/woodchips in a small cup, put it on top of the food and cover it. This technique is used for Thai desserts (but we use dessert candles) and กุรุหม่า kuruma (basically Thai/Indian korma)
Also, you can add some fat to the charcoal so it smokes more. Like melted butter or oil

Fine I can cook and I’ve cooked Jollof rice that tasted like party Jollof but I was just lucky because even me I was shocked but following your steps I achieved exactly that taste and aroma. I didn’t even have any bay leaf or garlic and ginger and thank God I don’t even like garlic or ginger. Plus I blended my pepper without water, the tomato served As my water so it was thick enough and I didn’t need roasting. So as I said I executed this for my wife this Mother's Day and the result was simply out of the roof. Everybody (my wife, children and my mother) loved the rice and especially the meat. My wife said she told my sister she was proud of me. Hahahaha. I am pumped and I am going to cook more. I actually love cooking but have rarely cooked since I got married (we are going to 17 years in marriage). So last time I cooked rice and stew I forgot to put oil and my children have not forgotten that. We laugh about it. So this has pretty much erased that and put me on major higher pedestal.😏😏😉😃😃😃.

Maybe to prevent the burn issue and be able to enjoy the burnt layer as well, you could try a Persian and Bangladeshi technique: place a layer of sliced potato at the bottom of a pot and after frying the rice, layer it on top of the potato and add water. The Persians call it Tahdig and the potato crisps up incredibly and the rice steams through on its own. It’s cheap enough to burn a potato or two as opposed to a bottom layer of basmati rice. And you can eat the potato afterward too!

Amazing! I've made Jollof before, but roasting the veg is a game changer! It turned out better than expected! This will be the recipe I use from now on! Thank you so much!

Thank you so much for this jollof process. I have been cooking jollof rice at home myself, but I never get the smokey kind of jollof . I made the best ever jollof rice today in my house when I stumbled on this video, and I followed to the latter each step to the end. In factmy cousin from London came on a visit, and today happened to be his birthday. He advised that I should start doing catering. Thanks, thanks, and thanks, dear Sisi yemi.
