Metal Mastication Episode 6: Swedish Street Tacos with Bjorn Englen, bassist Soul Sign

Swedish bassist extraordinaire Bjorn Englen joins us to make some Swedish Street Tacos. I know. I didn't know they were a thing either. Bjorn is the bass player for Soul Sign and has also played with Dio Disciples, Malmsteen Uli Jon Roth, Tony MacAlpine, Robin McAuley and Quiet Riot.
Bjorn Englen's Swedish Street Tacos
What You're Gonna Need:
1 lb. Flank, Skirt, or Flat-Iron steak (Flank is preferred)
Small container of plain fat-free Greek yogurt
2 tablespoons Avocado oil
¼ cup sugar-free ketchup
1/2 teaspoon thyme
Hot Sauce - cook's choice
3 limes
1/2 teaspoon Salt
1/2 teaspoon Black Pepper
Corn Tortillas
1 small head of green cabbage
1-2 avocados
1-2 jalapeno peppers
1 red onion
What You're Gonna Do:
Meat:
Pre-heat grill to high
Slap that steak on it and sear for 1 minute
Reduce heat to medium - cook to taste
Set aside
Slice against the grain
Sauce:
Combine ingredients in a saucepan and heat over medium heat
Stir occasionally
Shred cabbage
chop onion
chop jalapeno peppers
slice avocados
slice limes
Heat tortillas
Assemble tacos
Enjoy!
