A very common way to make hot honey is, cut the peppers in rings. Put them in a jar of honey. And let it sit in a cool, dark place for 2 to 4 weeks. After that you could either strain the peppers out or leave them in. But your honey is done!

I had honey infused with Habanero the other day. It was really good but not sure how it was made. Im assuming capsaicin oil because there is no pepper pieces in the honey....

Does it pasteurized the honey?
The honey I used was raw and I do not believe it was cooked enough to pasteurize it but I am not knowledgeable enough to give a good answer.

I believe you are correct. That's why I made two of them. one without the pepper pieces and one with.
