    My daughter likes to drizzle honey on sliced strawberries. One time she accidentally grabbed my hot honey. It was delicious!

    My brother grew hot peppers in garden this past summer and has dried them. He gave me a jar, so I think I will make him some hot honey using his hot peppers for Christmas gift this year. My family if full of cooks and we all have our own specialties and in lieu of material gifts we give the gifts of our labor in the kitchen to one another. Can't wait to see what he thinks of your hot honey! TYVM!

    Followed this recipie and really enjoeyd the end result. Scotch bonnets were a great choice and i added a little rosemary and thyme during the infusion. 10/10.

    The exact temp you need to keep honey under is 135F

    The dried chile version is more appealing visually and texturally. The fresh chile version is probably more versatile, as it's kind of a sleeper. You could probably even make homemade ice cream with that.

    I did ground dried pods 4 weeks ago,let the honey & heat sit 2 weeks before touching it it came out great, my fellow hot heads in work thought the same

    I must be sIow. I got a pizza coupon last week and it was for hot honey pizza. I thought, gee, I think I'd reaIIy Iike that, never heard of it. I Iove the hot/ sweet combo. EarIier I saw a vid of some woman making it and boiIing the heck out of it, and decided that didn't make sense. I'm SO HAPPY to see an approach that makes more sense. I am going to make this soon!!     My favorite part is making your own hot honey is way cheaper than the commercial brands. Once you make your own you'll never buy store bought again. Thanks for the video.

    Sup mike, the first one I never made like that before, mixing in gochugaru with crushed red pepper chilies and the apple cider vinegar I love it, be awesome unstrained, private stash lol, already thinking wings🤤👊. I make 2nd way but never added ACV, makes sense, great on chicken and waffles, vanilla ice cream.. 🤤, tyvm tc 🌶️

    Would adding vinegar not put the water content above 18% and cause it to ferment like mead? That may not be good if left on the shelf.

    I love your channel. Thanks! I have been wondering about something though. I see you chopping and handling the peppers without gloves. If I did that even the slightest bit my hands burn for a long time. Just curious… do yours burn and you just don’t care or are you immune? 😊

      Thanks! Yes, peppers don't really bother my hands, but I DO recommend gloves for most people, as the peppers can cause a lot of irritation. I usually wear them when working with a lot of superhots.

      I always wear gloves. My skin is super sensitive. I even get burns from the steam when I’m cooking peppers!

    I have a lot of super hots that a mild frost got on yesterday. Leaves are drooping so I'm going to salvage all I can . Going to make pepper sauce this weekend and planned on freezing the rest. I was wondering if you have ever used Ghost or Reapers in your honey mix?.? Thought about trying some after seeing this video.

    Hot honey has become one of my favorite things. Gonna get a lot of mileage out of this video, and save some cash while I'm at it. Think I might experiment with ghost pepper.

    I've seen garlic fermented in honey. Could you do this with peppers as well?

      Yes you can. I also do a garlic, honey, and fresh pepper ferment as well. You can dial up your desired heat level based on the chili you use.

    How long would that keep and do I need to keep in the fridge? Looks delicious though maybe use less chilli flakes for my taste.

      I mean honey usually lasts near forever if it's not contaminated, so I think you are fine to just store it closed in a jar. Just be sure all your cookware is clean and the jar is sterilized. Refrigeration will definitely help, thought it will cause honey to crystalize quicker (still safe to eat).

      Your hot honey should last around 3 months, but good luck not eating it all before then!
      If you're making hot honey with chili flakes then pantry storage is fine, but hot honey made with fresh peppers is more perishable and should be stored in the fridge.

      If you're using fresh peppers then you need to refrigerate it. Not sure about flakes.

    if you don't heat the honey, the fresh pods will ferment in there and preserve themselves.

    I thought you can just place chopped chilies in a car of honey and let it sit for some weeks and it’ll infuse? Wouldn’t that be better?

      You can do that, though heating offers a quicker (and fuller) infusion.

      You don't really ruin it, you still get great flavor. If you're worried about losing any specific nutritional benefits from your honey (such as with raw honey), you can, of course, use your simple infusion method. I prefer this way.
