My daughter likes to drizzle honey on sliced strawberries. One time she accidentally grabbed my hot honey. It was delicious!
Haha. Great intro to spicy food! =)
My brother grew hot peppers in garden this past summer and has dried them. He gave me a jar, so I think I will make him some hot honey using his hot peppers for Christmas gift this year. My family if full of cooks and we all have our own specialties and in lieu of material gifts we give the gifts of our labor in the kitchen to one another. Can't wait to see what he thinks of your hot honey! TYVM!
Let me know once you find out ;-)
Love your vibe! Very positive. Keep it up
Thank you so much!!
Followed this recipie and really enjoeyd the end result. Scotch bonnets were a great choice and i added a little rosemary and thyme during the infusion. 10/10.
Sounds great! Thanks!
Looks great Mike, im going to make both at the weekend. Keep you posted!👍
Please do - I hope you will enjoy it!
The exact temp you need to keep honey under is 135F
Incredible and simple recipes. Great video as always!
Thank you so much!!
Had an abundance of peppers this year.... You have been a great resource as this is my 3rd project from your repertoire
Thanks a lot, Chris. I am very glad to hear that!
The dried chile version is more appealing visually and texturally. The fresh chile version is probably more versatile, as it's kind of a sleeper. You could probably even make homemade ice cream with that.
Go for it! Let me know how it goes please.
I’m looking to add some new flavor this holiday and it should be awesome!
Great! Let me know how it goes please.
I did ground dried pods 4 weeks ago,let the honey & heat sit 2 weeks before touching it it came out great, my fellow hot heads in work thought the same
Both honey versions look fantastic!
Thank you - enjoy!
great stuff thanks
Very welcome!
I must be sIow. I got a pizza coupon last week and it was for hot honey pizza. I thought, gee, I think I'd reaIIy Iike that, never heard of it. I Iove the hot/ sweet combo. EarIier I saw a vid of some woman making it and boiIing the heck out of it, and decided that didn't make sense. I'm SO HAPPY to see an approach that makes more sense. I am going to make this soon!! I"M DROOLlNG NOW!! : )
Sounds great! Let me know how it goes please ;-)
Thank you 👍🏻
You are very welcome!
That would go great on Mexican cornbread!
Absolutely! Hope you will give it a go!
Great idea. I think I will prefer the pepper flake version. Thanks and God bless.
Great. Thank you and enjoy!
My buddy is an apiarist and just gave me a bunch of honey a few months ago. I'm going to try this, there are so many uses.
Go for it! I hope you will enjoy!
My favorite part is making your own hot honey is way cheaper than the commercial brands. Once you make your own you'll never buy store bought again. Thanks for the video.
So true!
have to learn to make this this would so be good on some veggie pizza
Nice! Agree on adding it to pepperoni jalapeño pizza!
So yum!
let’s go! this is awesome i am going to make this tonight for a charcuterie board this weekend! i have gochugaru on hand too! 😁😁
How did it go?
@@ChiliPepperMadness it went really well! i made a very small batch, about 5 Oz of honey, I am going to a small get-together on the 17th and planning on making a bunch for the party! awesome recipe thank you!
Nice! I love to hear it! =)

You're welcome! =)
Sup mike, the first one I never made like that before, mixing in gochugaru with crushed red pepper chilies and the apple cider vinegar I love it, be awesome unstrained, private stash lol, already thinking wings🤤👊. I make 2nd way but never added ACV, makes sense, great on chicken and waffles, vanilla ice cream.. 🤤, tyvm tc 🌶️
On ice cream?!?!?!?
Very good recipe 👌
Thank you, Alejandro!
❤Love the whole video! Awesome cooking and technique! Thanks for sharing this with us! Big thumb 👍9 & subscribe
Thank you so much 👍
I have beekeepers in the family so I'm never short of honey! The version with the chili flakes sure got my attention, going to make that soon. Thanks!
Nothing quite like fresh honey! Come back and let me know how it goes!
@@ChiliPepperMadness I will!
Where do you get the seed for that Korean chili. Id like to grow them and try it out.
Hot honey? My wife thinks I’m talking about her. 😊

I think it's happening!
@@ChiliPepperMadness couldn't happen to a better channel.
Sounds great on fried chicken!
Tastes even better haha ;-)
Yummmm can’t wait to try !
Can't wait for you to try it! =)
Quote: "But I'm gonna use 3 Tbs because I like it extra hot." That's the spirit Mike🌶🌶🌶
Haha, go chiliheads!
Would adding vinegar not put the water content above 18% and cause it to ferment like mead? That may not be good if left on the shelf.
Yo bro,new subscriber nice looking hot honey and cool vibe, much love from ireland keep up the good work
Welcome to CPM!
I love your channel. Thanks! I have been wondering about something though. I see you chopping and handling the peppers without gloves. If I did that even the slightest bit my hands burn for a long time. Just curious… do yours burn and you just don’t care or are you immune? 😊
Thanks! Yes, peppers don't really bother my hands, but I DO recommend gloves for most people, as the peppers can cause a lot of irritation. I usually wear them when working with a lot of superhots.
I always wear gloves. My skin is super sensitive. I even get burns from the steam when I’m cooking peppers!
I have a lot of super hots that a mild frost got on yesterday. Leaves are drooping so I'm going to salvage all I can . Going to make pepper sauce this weekend and planned on freezing the rest. I was wondering if you have ever used Ghost or Reapers in your honey mix?.? Thought about trying some after seeing this video.
Excellent. Yes, reapers! Make it nice and HOT HOT!
I've done it with dried Reaper, Scorpian, and Ghost mix. Came out awesome!
Glad to hear that!
I made a quart using some reapers , Ghosts and scorpions.. Almost too hot if that's possible 😁🤣!!@@ChiliPepperMadness
Will definitely try these, they look delicious! However you didn't try the flakey one tho!...how does it compare?? :)
I love it with the chili flakes. Adds a nice texture.
Hot honey has become one of my favorite things. Gonna get a lot of mileage out of this video, and save some cash while I'm at it. Think I might experiment with ghost pepper.
Enjoy!
Gonna smoke a ham tomorow at work! But first im gonna use your video as an inspiration to craft my hot honey to coat and glaze my ham with! Any other suggestions you could add would be great!
Sounds great! Have fun!
I've seen garlic fermented in honey. Could you do this with peppers as well?
Yes you can. I also do a garlic, honey, and fresh pepper ferment as well. You can dial up your desired heat level based on the chili you use.
How long would that keep and do I need to keep in the fridge? Looks delicious though maybe use less chilli flakes for my taste.
I mean honey usually lasts near forever if it's not contaminated, so I think you are fine to just store it closed in a jar. Just be sure all your cookware is clean and the jar is sterilized. Refrigeration will definitely help, thought it will cause honey to crystalize quicker (still safe to eat).
Your hot honey should last around 3 months, but good luck not eating it all before then!
If you're making hot honey with chili flakes then pantry storage is fine, but hot honey made with fresh peppers is more perishable and should be stored in the fridge.
@@ChiliPepperMadness Thank you. BTW I made your blackened fish recipe last week and again yesterday, my partner says it's the best seasoning on fish he's ever tasted. Made again yesterday and it will be a regular on our weekly meal plan.🙂
If you're using fresh peppers then you need to refrigerate it. Not sure about flakes.
Awesome to hear, Anne! Thanks for sharing this! =)
Can I make spicy maple syrup this way too?
Absolutely.
How long do these keep or how long until discarded
Hot honey made with fresh peppers is more perishable, and should be stored in the refrigerator. Hot honey made with dried peppers can be stored in a cool, dry place in an airtight container for 3 months or longer.
@@ChiliPepperMadness Yum. Can I make an alcoholic drink with it? Lol JK...or am I?
Haha! I say go for it and make me one! =)
You don’t dehydrate or char the fresh peppers? I want to make my own the store ones are weak
Correct, you don't typically dehydrate those. Hope you will give it a try!
How long will it keep?
Hot honey made with fresh peppers is more perishable, and should be stored in the refrigerator. Hot honey made with dried peppers can be stored in a cool, dry place in an airtight container for 3 months or longer.
What wouId happen if ya add chiIi crisp, aIso caIIed onion crunch at Trader Joe's, and add that to honey for a quick version???? yumm!!!!
It would be a nice mix!
How long does it last for?
Fresh pepper hot honey needs refrigeration, while dried pepper hot honey lasts 3 months in a cool, dry place.
What is the safest way to store this?
You can refrigerate it if you'd like.
What's the shelf life for these?
Stored in a sealed container at room temperature, it will last 3 months or longer!
@@ChiliPepperMadness That's great! Thanks a bunch. :)
How many grams is 3 tablespoons?
Roughly 43 grams.
@@ChiliPepperMadness thank you!
if you don't heat the honey, the fresh pods will ferment in there and preserve themselves.
straining dont affect the heat only the smoothness
I thought you can just place chopped chilies in a car of honey and let it sit for some weeks and it’ll infuse? Wouldn’t that be better?
You can do that, though heating offers a quicker (and fuller) infusion.
But won't heating ruin the beneficial properties of the honey?@@ChiliPepperMadness
You don't really ruin it, you still get great flavor. If you're worried about losing any specific nutritional benefits from your honey (such as with raw honey), you can, of course, use your simple infusion method. I prefer this way.
I bet your Thanksgiving dinner is interesting. 😊 Fire extinguisher optional? 🧯 😂
