    Im thai, I cook. And I can say that these food are authentic. We cook them exactly like he did (except more chili) even his pronunciation of the menu is also very correct. Good job!

    This guy knows exactly how Thai food is cooked. He's done it in the correct way. He even makes his own chilli paste which not every Thai person would. Good job.

    I stand and clap my hands for Derek at the moment when I see his sticky rice basket (หวดนึ่งข้าวเหนียว)
    My grandmother is a chef, she has been working in the kitchen more than 50 years and I learned a lot from her.
    As her grandson, I can tell you that "Khun" Derek has made every dish in the traditional way of Thai food, his accents for the menu and ingredients are also excellent!

    I'm Thai and have been cooking for 30+ years, I really respect how Derek is cooking Thai foods this authentic way. He was using Thai fish sauce more than I was cooking here in US.     After being a chef in a Mexican restaurant for 7 years, I chose to dabble in Thai cuisine after the pandemic shuttered my restaurant. I have to say it’s one of the best decisions I’ve ever made. The food is endlessly interesting and delicious.

    I'm Thai, and I've been to many Thai restaurants in many corners of the world, especially Europe. Most of them make western-style Thai food, which is not what we Thai people actually eat.
    But Derek... Damn. That's real authentic Thai food right there.
    Great one.
    The hardest part of Thai food is the ingredients though. If you don't get them right, you don't get the REAL Thai food.

      So true what you say, UK people think you eat thai red/green curry and fish cakes and spring rolls! If they had authentic foods like pappaya, pad kra pao, tom yum soup they wouldnt eat it, far to hot and sour for europeans palette. This guy can cook authentic food.

    For Larb you can improve taste of minced pork with change from plain water to pork stock soup. That is my mom secret when she make Larb for dinner. :)

      YES....!!! I use to make gai laab, I used chicken stock as well to cook it instead of water! HUGE DIFFERENT all together.
      Ooohhh, I usually don't put the toasted rice until just right before serving. They can get really soggy.

    Another Thai person here, this was so wonderfully refreshing to watch and see farang make truly authentic Thai food. The tools, methods, ingredients are also completely correct. The point that he makes that you can learn Thai methods in cooking to build up your knowledge of Thai food is spot on. Understanding what flavor profiles to build on or what local ingredients to use can really elevate Thai food at home. Definitely the best version I have seen on RUclips so far! We need more videos like this.

    I find that the thing that makes Thai cuisine so lovable and so unique is the sheer amount and variety of its native aromatics. Once you get into aromatics you just don't want a meal without them.

    I’ve watched so many cooking videos over the years and this video and this format is the best I’ve ever come across. Made all 4 of these dishes this week and all took 15-20 mins which is sadly all the time I have most evenings and all four dishes were 10/10 and all the ingredients came to around £30. Please keep these coming they are absolute game changers.

    I lived in Thailand for 12 years and love all of these dishes. The egg salad is my favourite where its just 20 Baht for a dish at a local bar in Chiang Dao. The sweet and spicy flavours, mixed with crispy egg is so refreshing in the mouth.

      Chiang Dao, where heaven in the winter turns hell in the burning season. I miss Chiang Dao anyway even I'm just in BKK adjacent and Thailand cooling time is coming close.

    I'm half Thai and come from a line of Thai restaurant chefs and street food cooks. Love how much respect Derek has for the food, including the rice. These are super authentic (down to the way he cuts the limes and onion!) and I can smell that larb through the screen - YUM. Love how this highlights simple food that hits hard with amazing and complex flavours. Thank you!

    I cook Laab Moo frequently at home. I like to add on the side, fresh crunchy green cabbage leaves and sliced cucumber. These help add a veggie balance to the meat and rice. Also the cabbage leaves can be used as a scoop, so that no utensils are needed. I also prefer culantro over cilantro, and extra mint. Would like to start, steaming my rice with Kaffir lime leaves, for more flavor.

    When I lived in Houston, there was a Thai food vendor at Urban Harvest Farmers Market who would cook using only local food available at the market, and I lived for the Thai omelet she made every Saturday! If you’re ever in Houston, they have a physical location now and they’re called Street to Thai.

    Very authentic way of cooking. He even made his own curry paste which tastes the best, obviously. Even for me as a Thai, I learned 1 thing or two from watching him. Big round of applause in making authentic Thai food without holding back on the taste to suit the westerners. Hats off to you.

    Derek did a fantastic job not only showcasing colourful dishes, but demonstrated just how approachable these are in terms of difficulty. This isn't at all about perfection, but you can easily tell he achieves the results he wants just from his own personal experience.

      Thank you! Appreciate that! That’s what I was going for,because of course all of these dishes can be and are made in varied ways of complexity and styles. For example, this is barebones laab, I often like to make it with stock instead of water, and make a galangal roasted paste to go in, with many more herbs and culantro etc etc - but the idea here was showcasing the must have components!! Thanks again.

    The boiling of the pork meat is something that I often do for things like ground beef that I use for taco meat or spaghettis sauce, or even lettuce wraps. Doing it in boiling water separates it perfectly, and gets rid of the grease when you strain it before adding to your recipe. Mike should do a segment on this...I think that once people learn about it they will like it.

    As someone who is half Thai and came over from there with my mother as a child and grew up on these dishes, I want to say that it makes my heart warm to see other cultures learning about our foods. Side note for those who don't like spice or can't eat it. You can leave out the peppers for the dishes that have them. The taste won't be exactly the same cause peppers don't just add heat, they also add their own type of flavor, but you can leave them out for a non spicy version. My mother would do that with small portions of the meals that had peppers in them for my brother. She'd make a whole batch then take out a small portion for him before adding in the peppers. He loved the dishes, but couldn't handle the hot peppers....lol.

      Thai food is among my most favourite that the world offers me. I have a Ukrainian background and born in Canada. My parents love it too but our favourite restaurant is a long trip but they always remind me of how much they miss their curry. The lady makes it for "white girl spice" lol but she understands our need hehe always makes us laugh. My bf is vietnamese and he makes fun of my lack of spice.. I'm spicy, just not that type ha ha :) Cheers from Canada xx

      Agree with the flavour from the chilis. I adapted all the Thai dishes I cook from time to time. And green curry is a good example for a dish which can only be great if its spicy as hell. With a few tablespoons of green curry paste I always felt something is missing. One day I was in a "spicy mood" and put a huuuuge amount of paste in it and that ended in my best version of grren curry, so: only a mountain of these small tasty green chilis can provide the flavour this dish needs :)

    Wow he nail it! I'm Thai myself and I can vouch for his skill. His dish is authentic and will taste just like how we do it here in Thailand. Not all cook can recreate thai dish like how he can cuz some will cutting corner or use substitute ingredients or just cook randomly altogether.

    I'm Thai as well and I can assure y'all Derek definitely knows what he's doing! I'm impressed that he even cooked Kao-khua himself! I've never seen any foreigner cook Thai food the way it should be before, but Derek mastered this, Bravo! Plus he pronounced the name of all dishes correctly!

    i really appreciate the way you cook thai foods. it's so authentic and skillful like we do in thailand. sometimes i watched a cooking show done my westerner and i wanted to scream at the way they cooked thai foods.

    Just made the egg salad and Larb today, turned out really well, main feedback I got was "You could use more mint if you want", I have some left over lemongrass so I will make them again next week so I can work out the kinks and remember everything well.

    I like the synergy of these guys! Derek makes it fun to learn while cooking! Asian food especially stir fry js pretty quick. It’s the prep of ingredients and chopping that takes most of time and planning out with thickness and cooking time. I actually pre-cut verges for several days use and slice and pre-marinate meats in individual freezer bags ready to use from freezer. The ground beef dish and that fried egg is something we learn as kids in Asian homes to quickly prepare for ourselves to put over bowl of rice that’s kept warm all day in the rice cooker 🙌🏽🙌🏽

    One of the best cooking skill in recreating "larb" Esan or Lao dishes, you should try to add young lemongrass finely sliced it's a delicacy. Congratulation for doing such a great job on this segment!

    Thank you for this informative video. I cook Thai food myself and grow lemongrass and thai peppers in my garden. It was great to learn new Thai recipes outside of the classics. It seems like Northern Thailand has a wealth of incredible dishes. I love how chef Derek says he's learning everyday about Thai cuisine. I hope he starts a channel one day.

    Just from the looking of how each dish was prepared and cooked, I know exactly how they smell and taste because the Derek did the perfect job in cooking every menu.     As a food bistro owner, I would say his cooking senses is so Thai, we use our feeling to measure fish sauace, palm sugar and every thing in our dishes, his Thai cooking skills at a top 1% for westerner.

    Larb or laab, is probably one of my favorite things to eat in life. It is pretty simple, yet has a ton of flavor. And it can be so different depending on where you have it. (No, i do not want a sweetened version of larb). I have a favorite restaurant that introduced me to it and I couldn't get enough. And after I found Mark Wiens on RUclips, I realized how easy it was to make. And, now if i need a larb fix, I can make it myself.

      This is a shorthand version of laabp, but the original form (the Lao versions) are much more complex, especially when dealing with raw meat Laapb (beef, shrimp, fish). The Thai style ones are more commercialized and the original Lao styles are not for the faint of heart, but it will elevate your palate to the next level of intense flavors.
