My dad had a really rough couple of weeks in the hospital right before Christmas. He finally got to come home last week and get away from that awful hospital food! My step mom has been spoiling him with his favorite meals all week, but his favorite thing of all is Key Lime Pie. On Saturday my daughter used this recipe (although with a pre-made graham cracker crust) to make Grandpa a pie. We went over to visit on Sunday and he LOVED this pie! My brother and I have a saying “cant buy experience “ being in the commercial painting business for 35yrs I just retired and now little brother is running the business. Which gives me more time to follow you and do your recipes. As a young boy I would stand next to my mom and watch and learn. She was a fabulous home cook. Simple meals that tasted soooo good. The best teacher ever. I am Italian and I cook exactly the same way. Common sense cooking and tasteful and healthy. My Sicilian grandmother on my father’s side worked cooking for the priests her whole life here in America and brought me in to that kitchen at 8 years old. I learned everything from her. My mother from the other side of the family was Neapolitan and cooked a different style but very well and an amazing baker taught me so much as well. I am so lucky and blessed to have had two grandmothers teaching me techniques. I miss them all. Mom is gone now too. Thank you for being so special. My friends and family say I am your number 1 fan!!! 😂❤😂

Chef JP, I never made this particular pie but the end result was awesome! I let my wife buy some of the ingredients, including the 'condensed milk, which out to be a mistake. I put the pie together, and in the oven, but the pie never set. She bought 'Evaporated Milk' instead and since it has been years since I worked with condensed milk, I did not notice until I watched your video again and saw how thick the condensed milk was. So, we went to the market and bought the correct ingredients, but I did not want to waste the original mixture, so I added a cup of sugar, some corn starch and thickened it and churned it in my ice cream maker. The result was an awesome Key Lime ice cream to top the Key Lime Pie. Thanks again Chef!
Just had this yesterday...Yours looks better Chef...Of course I think this desert is better if not too tart! Chef, You know what I would like to see? Something special. Chef, you failed to mention that key limes taste dramatically different than any other type of lime! I sure wish I was in your studio right now so I could have a slice of that YUM! That is nearly exactly how I make my key lime pie! Except I only use key limes, no Persian limes. But then, I am a native Floridian. Anyone who grew up, or lives in, South Florida and does not know how to make a key lime pie, shame on them lol. Key lime pie is the absolute perfect summer indulgence ❤️

What I've always loved about key lime pie is indeed how the sweet and the sour contrast with each other. The whipped cream, with its cool, smooth, slightly sweet creaminess, also sets up against the powerful lime custard in a beautiful way as well. My husband is a big pie fan and I have been fiddling around with key lime pie recipes for years, always pitching them because they did not taste like the Key Lime pies. So, I fed him a mouthful, after I had eaten some and he was over the moon. He loves it. My husband is very straightforward. If he didn't swoon, it was not good. He is now saying he can wait to eat his way through it. And he will. I am the tester, he is the eater. Thank you. A staple at my neighborhood feasts. While usually featuring one of your dishes Du jour the desert is always the same, mostly because it is my absolute favorite, Key Lime Pie. The running joke is while we buy the pie at Publix or some place else we always talk about how we made it at home. Well now I think I will actually make it at home. I made this last weekend for a friend of mine that lived in Florida for awhile and her favorite dessert is key lime pie. She's pretty picky and will always try it for dessert when she sees it on the menu at restaurants and is usually pretty disappointed with the versions that are available here in Indianapolis. Most of it is frozen, not made from scratch, and covered with whipped cream and they look more like a key lime version of a lemon meringue pie. She absolutely loved this recipe and said it was the best she's ever had.

When I had an oven I made a lemon pie, not condensed milk but a mixture of thick creams and natural yoghurt from the fridge, egg yolks, lemon juice and a little zest, a little sugar, a pinch of starch to thicken the preparation, a short passage in the oven at 150°c to freeze the lemon cream. The bottom was according to what I had, crumble, dough. I collected the syrup to make a meringue on the pie with the egg whites.

Conch fritters please! 😁 I visited the Conch Republic once. I was fortunate to discover a bar/eatery on the boardwalk that was still popular with the locals. I spent all afternoon sitting on a barstool with my dachshund on the next stool. Because I kept asking about food and they were not busy the cook sent out many different samples. I still remember the crispy fritters with a spicy dill sour cream dip. I also remember some waffle cut fried potatoes with a funky seasoning. Kind of cheesy, kind of musky like mushrooms. I was terribly lucky to make such acquaintances. I learned oh so much more drinking a beer in a dirt/sand floored bar.
Making this today and keeping it overnight for taste test tomorrow morning. We love you Jean-Pierre! What a wonderful and fun moving man you are! After taste test, crust is divine and flavorful, whipped cream fluff topping divine and nicely sweetened, Key lime filling: I would need to cut back on lime zest maybe zest of 1/2 to 1 lime, as it's overpowering. But our tastebuds keep coming back for more. Having some right now again.
I omit the eggs, use just juice and condensed milk and dip with Ritz crackers! Out of this world! Salty and sweet! I’ll make this true one also, the Florida girl here! 🌴🌺

Made this for a summer dinner party. Huge hit! I like it as its not too sweet. I used unsweetened coconut because it's what i had and it worked fine.

That is nearly exactly how I make my key lime pie! Except I only use key limes, no Persian limes. But then, I am a native Floridian. Anyone who grew up, or lives in, South Florida and does not know how to make a key lime pie, shame on them lol. Key lime pie is the absolute perfect summer indulgence ❤️

What I've always loved about key lime pie is indeed how the sweet and the sour contrast with each other. The whipped cream, with its cool, smooth, slightly sweet creaminess, also sets up against the powerful lime custard in a beautiful way as well. I recently traveled to South Florida, visiting again after an absence of several decades and, of course, sampled several restaurants' key lime pie examples because I simply had to revisit Florida in as many ways as possible. Chef JP, I made this pie yesterday. My husband is a big pie fan and I have been fiddling around with key lime pie recipes for years, always pitching them because they did not taste like the Key Lime pies. So, I fed him a mouthful, after I had eaten some and he was over the moon. He loves it. My husband is very straightforward. If he didn't swoon, it was not good. He is now saying he can wait to eat his way through it. And he will. I am the tester, he is the eater. Thank you. I am passing this on to our daughter so she can teach our granddaughters how to make it.

A staple at my neighborhood feasts. While usually featuring one of your dishes Du jour the desert is always the same, mostly because it is my absolute favorite, Key Lime Pie. The running joke is while we buy the pie at Publix or some place else we always talk about how we made it at home. Well now I think I will actually make it at home. Thanks for the pie, we too all love it.

I made this last weekend for a friend of mine that lived in Florida for awhile and her favorite dessert is key lime pie. She's pretty picky and will always try it for dessert when she sees it on the menu at restaurants and is usually pretty disappointed with the versions that are available here in Indianapolis. Most of it is frozen, not made from scratch, and covered with whipped cream and they look more like a key lime version of a lemon meringue pie. She absolutely loved this recipe and said it was the best she's ever had.
Persian limes are maybe the Best limes you can ever find .

A must try recipe for the hot days of summer
When I had an oven I made a lemon pie, not condensed milk but a mixture of thick creams and natural yoghurt from the fridge, egg yolks, lemon juice and a little zest, a little sugar, a pinch of starch to thicken the preparation, a short passage in the oven at 150°c to freeze the lemon cream. The bottom was according to what I had, crumble, dough.
I collected the syrup to make a meringue on the pie with the egg whites.

I visited the Conch Republic once. I was fortunate to discover a bar/eatery on the boardwalk that was still popular with the locals. I spent all afternoon sitting on a barstool with my dachshund on the next stool. Because I kept asking about food and they were not busy the cook sent out many different samples. I still remember the crispy fritters with a spicy dill sour cream dip. I also remember some waffle cut fried potatoes with a funky seasoning. Kind of cheesy, kind of musky like mushrooms.
I was terribly lucky to make such acquaintances. I learned oh so much more drinking a beer in a dirt/sand floored bar.

After taste test, crust is divine and flavorful, whipped cream fluff topping divine and nicely sweetened, Key lime filling: I would need to cut back on lime zest maybe zest of 1/2 to 1 lime, as it's overpowering. But our tastebuds keep coming back for more. Having some right now again.
I omit the eggs, use just juice and condensed milk and dip with Ritz crackers! Out of this world! Salty and sweet! I’ll make this true one also, the Florida girl here! 🌴🌺
