Harris is such a mood, I'm sure he's just doing home things in a typical old stained Tshirt, but always gets asked to come into camera. The color changing was hilarious.
I really like how Claire is always conscious of not making it too sweet. Sweet is good, sure, but it has to be in balance. And it's real easy to make things too sweet.
I feel like it elevates and differentiates the desserts, especially the more simple or traditional recipes - like classic diner pie versus a professional pasty chef's.
I love a little something sweet at the end of a meal but hate overly sweet stuff. I love that Claire is a chef who balances flavor. I don't have to worry about adjusting her recipes for sweetness. 😊
Made a double batch of this and it turned out amazing. Just the right amount of tart, and the guests ate every last crumb! None of us had ever had key lime pie before (not a thing here in Norway sadly), so we were all really hyped to taste it. Did NOT disappoint. Thank you so much!
Hi Claire, I just made “key lime pie according to Claire Saffits” and it turned out the best ever, according to my children all of whom are adults with incurable sweet tooth. They were raving about it all night and requested pumpkin pie for Thanksgiving so that’s what I’m making. Thank you for sharing your magic in baking with us. Thanks for the two tips on adding an egg yolk to the crust and something like sour cream or cream cheese to the whipping cream. These are life improving tips to the home baker.
I just made this recipe today! The cream cheese was delicious in the whipped cream! I did add a tiny bit of vanilla extract to my whipped cream but that's just personal preference. Very happy with how this whole thing came together

I have made this twice for the holiday season and it's always a hit with my family. The incorporation of cream cheese for the topping is brilliant It gives the look of a meringue without the hard work. I also added some salt and vanilla to the topping.
When fresh key limes are not available I use Nellie and Joe’s key lime juice but I would never personally use a Persian lime in a key lime pie, but of course I am a Floridian so it’s more important to me than others. I am interested in trying Claire’s topping… it looks like a yummy addition.
I grew up in the Keys.. when the Internet was this new thing we didn't use like we do now. I learned many slightly different Key Lime Pie recipes from my elders. Persian limes will never touch my pies, and Nellie and Joe's is absolutely the way to go if fresh Key Likes can't be had.😁
Was told they don't grow the key limes in the Florida keys anymore. Grew up in Arizona key limes were called Mexican limes. So if you see Mexican limes in the grocery store they are the same as key limes. Don't know I it would taste with Persian limes

I just made your recipe today and it turned out perfect!!! I wish I could post a picture of it. It was my first time making KLP and I was very excited to enjoy it on a hot day. The whipped cream was delightful! A tip for the whipped cream, USE ROOM TEMP CREAM. it whipped up by hand to stiff peaks in less than five minutes! Cold cream takes at least twice as long to whip, and you don't have to worry about the cream cheese locking up from the cold cream.
This my family’s Christmas dessert. The acidity is perfect for the end of a rich meal. We fought over Christmas desserts for years and key lime pie was the one dessert we could all agree on.

I've never added eggs to key lime pie. 3 cup sw con milk, 1/2 cup sour cr. 3/4 cup lime juice, 1 tbs zest. bake @350 for only 7 min. it's the reaction between the milk and lime juice that sets it. best of luck!
This is super similar to the recipe I use for my key lime pie. I use crushed gingersnap cookies and cinnamon graham crackers. I add a bit of grated ginger into the mix (only a lil bit!) and the zest of 2 limes. I definitely want to try it with the cream cheese whip topping! I usually just do some lightly sweet whipped cream but that just sounds incredible. 🤤

I watched this video the day it was released, and made the pie for a family dinner that weekend, and oh my god was it ever delicious. I cut back on the juice just a smidge because I was worried about how tart it was going to be, but I totally could have added all of the juice, and will next time! I got so many compliments on the crust too! Might be replacing my go-to lemon meringue with this recipe! You're the best

Speaking of great American citrus pies, I highly recommend East North Carolina Lemon Pie (which has a Saltine cracker crust!) and Sour Orange Pie (which is a real Floridan pie). Both are so so so good!

I just made 2 key lime pies this evening for my wee Mamma's birthday tomorrow. Obviously, being in Northern Ireland, key limes are not a normal ingredient that we can get, so it's normal limes for my pies too. My recipe is pretty much the same as yours, but I add 50g of desiccated coconut to my digestive biscuit crust and no added sugar as digestives are sweet enough. And of course, plenty of fresh whipped cream too, Lee :)
I over cooked my crust 😢 but the rest of filling and whipped cream was delicious! My 5 year old gave me a thumbs up and a hug ❤ She's a very picky eater so this was a huge win!!! I want to try it again and hopefully I can perfect it.

I just made this, and it turned out great! The filling is excellent and nice and tart, which is exactly what I like in citrusy desserts. The crust also held together really well. Not sure if it's just my oven, but my filling was still pretty runny after 15-20 minutes, so I left it in a bit longer. I also added a bit more cream cheese to the topping, but that's just personal preference. It's also great as written in the recipe.
Mine had to be in the oven for about 30 minutes before it looked set. Still waiting on it to cool to see if it even that was enough time. My oven must be too cold... need to get a thermometer.
When I hear key lime pie, I don't know why but I assume it's a difficult recipe. Hearing Claire say it's easy in the intro makes me want to give it a shot.
Omygod. Thank god YT recommended this! Love watching Claire and also tarts are probably my fav dessert especially lemon/lime tarts. You get that toasty crunchy base and the main flavour in the middle and that cream on top balance the sweetness and tanginess. I want a slice now and with english tea 😭😭
This recipe was delicious and a hit at a summer BBQ I went to. Only change I made was to the crust - half graham cracker, half speculous cookie (and omit added sugar). Yumm, thank you Claire!
I was going to make this when my husband told me he hates lime 😅 the night before … so I substituted every lime component with lemon and it turned out great! I’m a beginner baker and I’d never made a graham cracker crust before (I’m from Europe and we don’t really do those where I lived) and it turned out a little too crumbly, but otherwise it was a nice and straightforward recipe. Hubby goes for seconds every time now, so I’m kinda proud lol
I'm Australian and my whole life I thought you had to use key limes for key lime pie so I never thought I could make it. I figured I could use limes but I thought it would be blasphemy. But this excites me! I can make it now!
Yeah, don't worry about that. I can't buy vegemite where I'm from but I just make my own by grinding up yeast and sardines. You'll do just as well with the Persian lime in the key lime pie.
I got the recipe from my grandmother, and my nanny. We are southern. This recipe can also be used to make lemon meringue pie. All good right up to the topping. Never never whipped cream. You have 5 egg whites right there, beat to almost stiff peaks with a little sugar, and slide from the bowl to the top of the baked custard and seal the edges to the crumb. Make the meringue pretty and put it back in the oven until all those peaks or swirls are golden brown. Cool thoroughly and chill once it's cool.
I make a mix of sour cream and sugar(just to taste, thin layer)and that gets spread on the top for the last 5-10 min of baking. Gives a nice contrast to the custard.
This was delicious, I didn’t think I’d like it because I’m not the biggest fan of citrus desserts. But this is definitely something I’d make again. It was easy too.
@@CSaffitz so I made it… And this was one of the best pies I’ve ever made!! A good crunch (and not soggy) pie shell. Velvety texture of the key lime filling. Not too tart or tangy but just what I needed. What did it for me was the cream cheese whipped cream. The cream cheese whipped cream was a *GAME CHANGER* and I didn’t expect it to be as addictive. It was ridiculously good! Why I never did that with any of my pies, I don’t know but I will now. While adding the zest of lime, I almost was tempted to add some coconut shavings. Maybe next time. Thank you for sharing this recipe. This made my day.

This recipe is so popular here in Brazil as well! But here we always use limes, cook the filling on the stove and top the pie with meringue instead of whipped cream. I'll definitely give this recipe a try, I was so intrigued by the changes!

I will be trying Claire's version! here in Brazil we have a very popular somewhat easier version, where just the crust is baked and the filling is made of a can of sweet condensed milk, a can of heavy cream and lime juice/zest blended either on a food processor or a blender. the mixture of fat and acid emulsify it and it becomes a very thick delicious cream. you just fill the crust and refrigerate it for a couple of hours, add some whipped cream and/or crumbled suspiros (are these a thing in america?) and that's all!

I make this pie only once a year on my brothers birthday, I think I'm more of a "only one bowl" kind of lady, more steps than that are way too many steps, but I try to step out of my comfort zone sometimes. Love from Chile!
Speaking of great American citrus pies, I highly recommend East North Carolina Lemon Pie (which has a Saltine cracker crust!) and Sour Orange Pie (which is a real Floridan pie). Both are so so so good!
I made 2 pies today, 1 for my friend's birthday tomorrow and one to be sure it worked. WOWSER so good :) Thank you, Claire! My go-to recipe was misplaced by the moving packers and I needed a recipe right now. This one is better. I am happy and think my friend will be too. :)

I just made 2 key lime pies this evening for my wee Mamma's birthday tomorrow. Obviously, being in Northern Ireland, key limes are not a normal ingredient that we can get, so it's normal limes for my pies too. My recipe is pretty much the same as yours, but I add 50g of desiccated coconut to my digestive biscuit crust and no added sugar as digestives are sweet enough. And of course, plenty of fresh whipped cream too, Lee :)
Key lime pie is probably in my top 3 of all time favorites. So happy your channel is thriving, you're awesome!

I over cooked my crust 😢 but the rest of filling and whipped cream was delicious! My 5 year old gave me a thumbs up and a hug ❤ She's a very picky eater so this was a huge win!!! I want to try it again and hopefully I can perfect it.

My favorite key lime/lemon filling swaps eggs for sour cream - helps to add a good amount of tang!
I just made this, and it turned out great! The filling is excellent and nice and tart, which is exactly what I like in citrusy desserts. The crust also held together really well. Not sure if it's just my oven, but my filling was still pretty runny after 15-20 minutes, so I left it in a bit longer. I also added a bit more cream cheese to the topping, but that's just personal preference. It's also great as written in the recipe.
Mine had to be in the oven for about 30 minutes before it looked set. Still waiting on it to cool to see if it even that was enough time. My oven must be too cold... need to get a thermometer.
I love the addition of the cream cheese to the whipped cream! I will definitely be trying that.

Omygod. Thank god YT recommended this! Love watching Claire and also tarts are probably my fav dessert especially lemon/lime tarts. You get that toasty crunchy base and the main flavour in the middle and that cream on top balance the sweetness and tanginess. I want a slice now and with english tea 😭😭

I was going to make this when my husband told me he hates lime 😅 the night before … so I substituted every lime component with lemon and it turned out great! I’m a beginner baker and I’d never made a graham cracker crust before (I’m from Europe and we don’t really do those where I lived) and it turned out a little too crumbly, but otherwise it was a nice and straightforward recipe. Hubby goes for seconds every time now, so I’m kinda proud lol

I'm Australian and my whole life I thought you had to use key limes for key lime pie so I never thought I could make it. I figured I could use limes but I thought it would be blasphemy. But this excites me! I can make it now!
According to some of these commenters it is sacrilegious. But you are OK, and Claire Agrees.
Yeah, don't worry about that. I can't buy vegemite where I'm from but I just make my own by grinding up yeast and sardines. You'll do just as well with the Persian lime in the key lime pie.
I got the recipe from my grandmother, and my nanny. We are southern. This recipe can also be used to make lemon meringue pie. All good right up to the topping. Never never whipped cream. You have 5 egg whites right there, beat to almost stiff peaks with a little sugar, and slide from the bowl to the top of the baked custard and seal the edges to the crumb. Make the meringue pretty and put it back in the oven until all those peaks or swirls are golden brown. Cool thoroughly and chill once it's cool.
I make a mix of sour cream and sugar(just to taste, thin layer)and that gets spread on the top for the last 5-10 min of baking. Gives a nice contrast to the custard.
This was delicious, I didn’t think I’d like it because I’m not the biggest fan of citrus desserts. But this is definitely something I’d make again. It was easy too.

And this was one of the best pies I’ve ever made!! A good crunch (and not soggy) pie shell. Velvety texture of the key lime filling. Not too tart or tangy but just what I needed. What did it for me was the cream cheese whipped cream. The cream cheese whipped cream was a *GAME CHANGER* and I didn’t expect it to be as addictive. It was ridiculously good! Why I never did that with any of my pies, I don’t know but I will now. While adding the zest of lime, I almost was tempted to add some coconut shavings. Maybe next time. Thank you for sharing this recipe. This made my day.

This recipe is so popular here in Brazil as well! But here we always use limes, cook the filling on the stove and top the pie with meringue instead of whipped cream. I'll definitely give this recipe a try, I was so intrigued by the changes!

here in Brazil we have a very popular somewhat easier version, where just the crust is baked and the filling is made of a can of sweet condensed milk, a can of heavy cream and lime juice/zest blended either on a food processor or a blender. the mixture of fat and acid emulsify it and it becomes a very thick delicious cream. you just fill the crust and refrigerate it for a couple of hours, add some whipped cream and/or crumbled suspiros (are these a thing in america?) and that's all!
Suspiros appear to be baked meringue cookies. They are available in the States but aren't super common and may be tough to find.
