    Hi Stephanie, I made this today with some changes and it turned out great! I halved the recipe, and used 70gm white sugar and 40 gems of brown sugar and still bit sweet for my taste. Also I have added some ground nutmeg and some more coffee. Also use half almond meal +half plain flour.It’s nice and crispy and yummy!!

    A little different way to make oatmeal cookies from the way i usually do mine. Must try this recipe. Great tip to try dry cranberries instead of raisin.

    I made theses today. I couldn’t find my ice cream scoop so I used my 1/4 cup measuring cup. They came out great, my family loved them!!!!

    The most think I love about your Chanel you repeat the amount in grams, I am the type prefer to use weights rather than just cups and spoons, and appreciate that conversion on the video. Easy to just watch and follow

    Stephanie - I wanted to make a different kind of cookie, and saw this. I actually had all the ingredients - an open container of old fashioned oats that needed to be used, a half box of crispy rice cereal, honey, instant coffee, etc. I didn't have chocolate chips, but I had a bar of "special dark" chocolate, which I cut into small chips. The only hard part is creaming the butter, sugars, and honey by hand, lol. I used a large mixing bowl and a wooden spoon, like my Mother would have done. I cut the amounts in half, that's plenty for me. They're ready, so it's time to get them baked so I have a midnight snack! Thanks!
    Edit: I baked a half dozen, put the rest of the batter in the fridge for tomorrow night. They came out golden brown, crispy, and delicious, slightly chewy and soft in the middle. I'll def make these again sometime, and try adding raisins too.

    Can the cookies dough be made in advance and store in fridge? How long can it be stored (not in freezer)

      You could store the batter two to three days in the fridge.

    I made these. Really great. I HATE coffee and as you said it added the “just something special” I didn’t want to just leave it out so I substituted an item I get from King Arthur, Sweet Ground Chocolate and Cocoa blend. I did increase to 1 Tlbs. as coffee is so much stronger. I also use this when I make your Melt Away cookies. I roll half in confectioner’s sugar and the rest in the ground chocolate.

      I've never tried coconut oil so I couldn't say how well it would work.

      I make my cookies with coconut oil. It tastes delicious. I melt it to make the dough and then let the dough rest in the fridge before rolling the balls.

    Your cookies look fantastic! I don't have brown sugar right now so can I substitute that with more granulated white sugar?

      I've never tried it, but it should work.

      It will work, but it will affect the final texture of the cookie. I misjudged how much brown sugar I had when going to make a different cookie and I replaced what I was short in brown with white. They were still good, but they we're not as the pictures with the recipe showed.

    Thanks for this recipe Stephanie. I am planning to bake it this weekend, just want to skip the chocolate/resin/ cranberry part. Will I need to adjust anything in the recipe if I want to skip that? Also, if I want to use almond flour, would it be of same amount as plain flour or different?

      You don't have to adjust the recipe if you want to leave out the chocolate chips, etc. You can replace some of the all purpose flour with an equal amount of almond flour.

    I never heard or seen an oatmeal cookie recipe with the Rice Krispies cereal. Is that more for it just being a crispier cookie,? Does it matter to include that or not?

      It just adds a crispy crunch but it doesn’t change the texture of the actual cookie so you can leave it out.

      Just use raisins instead of the chocolate chips as she suggested. I prefer raisins also.✌🏿
