Luna, you can find lime leaves ai a major supermarket in the fresh vege section. Just ask a worker for lime leaves and lemongrass.Nigella uses lime juice to make the dish sing.
Making curry from where im from (malaysia), takes so much longer.onions, avoiding burning curry powder, not overheating the coconut milk, etc.this definitely cuts down cooking time.will try this, hope its delish👍
The same thing goes in my country (Brunei) especially when making meat curry, to speed up the whole process people tend to add metal spoon or fork in the curry so it'll cook much faster.
tbh actual green thai curry is insanely fast. So is japanese curry. Theres virtually no point to make your own paste (except if recipe desperately calls for it) because store bought has all the ratios correct and its pointless to measure your own then end up messing it up.

Because it is Thai food and unlike Indian curry, Thai curry doesn't require the paste to be cooked in oil. Thai curry paste is simply boiled in Coconut milk and veggies and tofu is added to the curry.
don't understand why she had to put the fish stock into a jar with water then into the pan. For me it's one redundant step and one more washing to do. I'd just add the stock straight to the curry.
