We use this dish with different kind pf protein u named it either beef,chicken, prawn, crab, cuttlefish , and can also be done with varieties of vegetable or you can just combine the protein and vegetables .. Its a very flexible dish .. Oh and by the way, you can heighten its taste by adding turmeric leave if u happen to have it ... I hope that u can cover many more recipe from Malaysia and to name a few like masak asam pedas, different version of laksa (penang, terengganu,sarawak), masak merah, gulai, opor and the varieties of dishes from diffrent region is also limitless ... I cook a lot for them and bake all our own bread. I love to bake, Brioche, Sour Dough, Wheat, Rey, etc. ...I love to bake cookies and cakes. I also bake my late Scottish grandmas and mother’s Plum pudding and short bread cookies. Have not tried much curry cooking.
Use fresh turmeric whenever you can. There was a scandal some years ago where powdered turmeric imported from India and Bangladesh was intentionally contaminated with lead (to make it more yellow and add bulk) and had to be recalled. Now I only use fresh. 1 teaspoon turmeric powder = 1 tablespoon grated fresh turmeric. If you don't peel them immediately they can be kept intact at room temp for a few weeks but if you don't use turmeric that often it keeps really well in the freezer.

Basically you can use the same paste and substitute the eggs with lightly seared chicken, fresh fish or smoked beef. In certain part of Malaysia, they would usually sweat the paste without oil first, then goes in the diluted coconut milk and a few minutes before you turn off the fire, the thick coconut milk. The coconut milk should not split. A pure Masak Lemak where it originally from doesn't use any shallots or ginger but I guess that in times it was modified to suit taste in other part of states in Malaysia. Instead of using tamarind paste, you can also use tamarind slice. The lemongrass is usually pounded a bit to release its juices. A bit of red chillies give a bit of colour and thinly sliced turmeric leaf as garnishing gives an aromatic smell.
yes we have masak lemak telur here in malaysia. we rather like it in a lighter color shade when it come to the dish itself. but your is very fine aswell. and look appetizing too.
Egg curry is a household dish from Bengal. But this Malaysian dish is different. Amazed to see it done by such a legendary cook. Many use store bought turmeric, but using fresh turmeric is always healthy, both for its freshness and also it's also a lot more healthy. In Bengal mostly Mustard oil is used and the ingredients may be sauted directly on oil without blending them. This adds a rustic flavour to it. Coconut milk can also be replaced with Greek yogurt. P.S.- We always eat green chilli ❤️ from India
Such a simple but versatile sauce. You can put any kind of meat, vegetable or a tub of tofu in it and it would be delicious. I like Nigella's advice that, however hot you think you'd like your food, don't eat the finger chilies; but if you do by mistake, there's always the local fire brigade to help you out.

In my family minang version we also put daun kunyit - tumeric leaves.. and the eggs is well done. Usually we use duck eggs. My mum’s eyes was like this 😳 when i showed her your half well done eggs 😅🤣🤣 But its ok.. Everyone got its own version... Love love love u nigella! 😘
