    Made these at home and they were AMAZING!!! They weren't runny at all, they were creamy and delicious. 10/10 for the eggs, I just wish I had some homemade croissants and some smoked salmon to get the full intended flavor of this dish but I would 100% recommend you try this recipe

    It was probably 11 years ago that I showed this video to my Dad on Christmas Eve. It was early in the morning but he really liked it, thought it was something we should do, so I went out, picked up croissants, smoked salmon and more eggs. I remember the next day we were playing the video as he cooked along.
    When he first tried it, he actually exclaimed, "Oh my GOD!"
    It's now become a tradition in our family on Christmas.

      You're not kidding, and neither was your dad. I saw Ramsay's recipe on whatever cooking competition show it aired on and because I HATE brown, hard, fried eggs, I thought I'd try it. First time around, I followed the recipe exactly (it included creme fraiche instead of cream), and yep - custardy yet somehow still fluffy perfection.
      But creme fraiche is not only a specialty item and can be a bit hard to find, but also pricy and quick to expire if you don't use it all up, the next go-'round substituted a small dollop of plain, whole milk yogurt (not reduced fat) - my pick was Fage, since upgraded to Siggi's or Skyr. Make sure you're using the whole milk version of PLAIN yogurt, not vanilla, as the packaging is almost identical and the vanilla has added sugar - NOT the ideal add-in to scrambled eggs - bleah). Worked like a charm, and I've been making them that way ever since.
      And I do believe my next round will include the smoked salmon and the toasted croissant. I knew they were rich in butter, but toasting them stovetop with no added oil or butter - that's genius.

      I don't even understand why he bothered adding cream after all that butter. Eggs are mild flavored, all you'll taste is butter/cream. I guess some people don't like the taste of eggs :p

    I followed Ramsay's recipe and the eggs were pretty damn good. It does take longer and requires a little more attention to get them just right. I thought they would be runny but they weren't. They were creamy and delicious. I realized I have been overcooking my eggs for the last 40 years.

      Hey, You weren't over cooking your eggs for last 40 years, it was just different type of cooking. Eggs you felt over cooked might be american style scrambled egg while Gordon's style is UK style.

      Butter/No butter defines what kind of cooking style it can be, but it mostly depends on controlling your heat.

      Suyoung Cho he is cooking them french style. if there is anything the french love it is rich foods. the british tend towards very hearty and usually quick foods. US generally is a mixture of different cultures depending on area.

    I made eggs like this for the first time and it is a world of difference. I don't use cream, but instead milk. I used to mix it all together in a bowl and cook them in a pan with butter, but they would always end up the same. Hardened rubbery masses that tasted like eggs, but were all around pretty bland.
    After making them like this I don't ever want to go back. I remember when I was younger my dad tried making them like this (he used to be a head chef at a popular restaurant, but he moved on to other things). He quit making them like that after I refused to eat them because I thought they weren't fully cooked. Gooey looking eggs have always been a sign to tell me they're undercooked, and while that IS true, there is obviously a difference between "cooked" and "overcooked", and EVERYWHERE I've ever gotten eggs, they're always overcooked. I've never been to a restaurant and been served eggs cooked like this, which is a damn shame because they're amazing.
    Although you really should go easy on the butter if you decide to cook them like this. Add just enough to coat the pan you're cooking them in so they don't stick and if you feel like you want to add more to it, then go ahead. Also it's very important that when you're doing this, do exactly what Gordon does and take the pan off the heat when breaking up the cooked eggs on the walls of the pan. If you don't do this it will definitely overcook and end up like all the shitty eggs we've all eaten for our whole lives.

    This is a very French way to cook scrambled eggs, you can tell from all the butter and cream. This is how Jacques Pepin cooks his scrambled eggs so its not just a Ramsay recipe, its a very old school way of doing it. If people are willing to eat processed food but say that these perfectly cooked eggs are bad for you, then I'm sorry, you have your priorities skewed.

      Michael Jacquart The french tinge would be from Gordon's former teacher if I'm not mistaken. Marco Pierre White. And its not just the europeans that use butter to what the every day man would call excess. I come from a family of chef, and when we say, put a pinch of salt, or a knob of butter, would be considered far too much by most. But it makes the dishes' delicious, and I love my food, so why not.

      Zertiof The cholesterol and olive oil is considered healthy. Any Oil (butter/lipid) that is solid at room temperature is generally not good for you since they're saturated fats)

      ***** Butter is entirely digestible, trans fats which like butter are solid are bad for you because its a synthetic unnatural product made from oil. They key thing is, butter is a natural product of 2000 years, olive and rape seed oil is, products like flex which stick to the roof of your mouth are a synthetic manufactured oil based fat which your body cannot deal with. The french smoke, eat cheese and butter like there is no tomorrow, eat fresh food not processed muck and live longer than the british and americans.

      +4meterplus Most people do not realize that in high end restaurants butter and salt are going to be used in a lot of dishes. Nobody goes to a fucking steakhouse to get steak cooked in nothing or vegetable oil. Butter and salt are a chef's two best friends.

    This is my first recipe made ever as a 16 year old and i absolutely loved it!!
    however i didnt have any cream on hand so i just tried mixing it well, the butter did a remarkable job at keeping it creamy and fluffy, youd be surprised how much carryover heat cooks the egg and i found this lovely with toasted chroissant and white bread.
    however i do believe adding the salmon to the egg mixture wouldve been smarter as the cold salmon cooled the egg down a bit despite being on hot toast.

    BEST scrambled eggs recipe EVER. All just a different technique. Hate fluffy, dry, eggs but never tried removing from heat to avoid. Worth making all year.

    I've seen Gordon Cook those same scrambled eggs in a different video segment I think it was his Ultimate Cooking Course maybe it was on three different ways to make scrambled eggs. I decided to try making those same eggs as in this video the same way with the chives at the end. Those eggs was pretty damn good, creamy good. They were off the charts good. Best scrambled eggs I've ever had period. Using a flat spatular makes allot of difference as well, so recommend using one. It really take patience doing it on low heat and you will get a damn good hand wrist workout turning them eggs the entire time no joke. I'll definitely have to try this one with the Salmon on the toast.

      I care that the eggs are really creamy, I'd rather have regular scrambled eggs than that. I don't like my food to be too soft especially if it's like your eating something that's extremely soggy. Gordon tried to make something that is simple and delicious as is, fancy. To be honest gordon, this didn't impress me and same with alot of other people I showed it too. Also who the fuck puts parsley on egg? All you need is salt and pepper and butter and optionally cheese if it's a breakfast sandwich.

    I made this without butter at all, mainly because we ran out, but my wife still thought they were still too creamy or "moist". I loved it on the other hand. I will definitely make this again with other variations.

    As a daily breakfast, only use butter at the beginning and swap cream for 0% yogurt or low fat creme fraiche.
    90% as tasty and you won't get fat.

      socialdef3 Lol natural fats don't make people get fat and get heart disease, it's processed carbohydrates that screw people over. I imagine a lot of people learned about the food pyramid when they were younger, the food pyramid that said our diets should mostly be grains with very little fat, the same food pyramid that was created by the agricultural department of America, who surprise surprise, profits from people buying grains.
      Natural fats are good for us, do yourself a favour and kick the grains and processed carbohydrates, and stick to natural foods, your body will thank you.

      I think people kind of forget that not everyone prefers or can even eat the same food. Some people require low carbohydrate diets, others are lactose intolerant, while some people are allergic to peanuts or some other kind of food item. This looks like a great recipe to pull off on a holiday morning, and this is coming from someone who is a health nut that counts calories and weighs himself everyday after workouts. =)

    Thank you Gordon Ramsay. This was a big hit at our place for a winter holiday brunch! We didn't have croissants, so I used focaccia, browned in the pan, with a little butter.
