Yeah you could buy the ingredients cheaper but you are not just paying for the ingredients, you are paying for somebody's time and the convenience of having someone make your lunch for you. If you get work done on your car do you say "I can get those parts for £80!!"?

This is London, these are not box standard, cheap ass ingredients and I think you will find that a sandwich weighing less than half as much with processed fillings will cost £3 - 4 from a supermarket or convenience store. Get real, case closed.

People just want to say these sandwiches looks awesome. Regarding the tomato thing just bare in mind if they don't have it on the menu even if they have the ingredients they're not obliged to do it. I don't think they have tomatoes there either way usually stalls like these just have the ingredients to make what's on the menu. In any case just respect that if they don't do it then simply either order something you want or move to another stall to find the one that gives what you want. I personally don't see an issue unless the worker was being rude in terms of manners etc. Saying they don't do it is fine. It's the same as shopping if the shop does do something you want just move to another that doesit or something. Anyone who worked in service industry will know sometimes customers may think taking something away or adding something is simple. Yes it is when it's quiet but when it's busy it's very easy to make mistake for anything special as you're so used to the stuff on the menu.

That is a HUGE AMOUNT of Caramelized onions. It's like two whole onions reduced down. Just a pinch makes nothing burgers into something burger.
