    I just got 120 lbs of organic sweet potato from a local farm I just discovered. The best part is it was only $30. 120 lbs of Walmart or Rouses sweet potatoes would have cost me $130.20. Not to mention the grocery store potatoes a already wrinkled & drying out. If it wasn’t for Becky I would have never thought to look for a local farm.

      I'm still searching for one. We used to be able to connect with farmers at a farmers market and place orders for the following weeks pick up. Due to covid all of the farmers markets were closed and never reopened. You are more lucky than you know.

      I mean it makes sense when you think about it but I wouldn’t have thought I would be able to buy directly from a farm. It’s basically wholesale for food. Definitely will see if it’s an option in my area.

    Bake your sweet potato peelings, add salt , pepper and oil and bake or air fry, serve with a dip. Delish. Don’t throw away

      The potatoes in the video are Yams. Sweet potatoes look very different

      ​@@pennydyer9719she says she is peeling sweet potatoes. They are sweet potatoes lol. Yams are larger with a dark brown thicker peel, and are very hard to find in any American grocery store. They are African root crops. Colloquially, sweet potatoes can be called yams here in the US, but they genuinely are two very different things.
      Another fun fact, sweet potatoes aren't even true potatoes, they are in the morning glory family of plants, while white potatoes are in the nightshade family, along with tomatoes and peppers.

    I took a page out of your book and made garlic and ginger pucks. Also made tomato paste blocks (using an ice cube tray) and olive oil/herb blocks. With soup season upon us made freezer bags of celery, onions, carrots and herbs for soup bases. This weekend I will be using your recipes to make pizza crusts, French bread, biscuits and pie crusts .

      I love to freeze lemon and lime juice to use up my lemons and limes. I use an ice tray and they work perfect as well. Loving the puck idea.

      How do you make olive oil herb blocks? I just harvested 80% of my basil ( for the second time ) and I’m looking for ways to preserve it. I tried dehydrating it but it came out smelling weird. I was going to look into finding a recipe for pesto that can be canned ( without the cheese) but herb pucks sound appealing.

      @@michellesanchez741, I've seen pesto made and frozen in ice cube trays. After frozen, of course, store in freezer bags.

      @@michellesanchez741 You can chop the herbs up and put them in an ice cube tray, then fill with some oil and freeze. When you need to use it for cooking you just pop one or two out. No need to defrost them.

      @@michellesanchez741 I make or buy fresh basil pesto (not the canned kind as I don’t like that taste- much prefer fresh, from the deli) and then freeze it in ice-cube trays. It’s perfect thrown in with cooked pasta. Even better, I brown some chicken breast, then add the frozen fresh pesto and some cream or evaporated milk (I’m Australian- we don’t have all the kinds of things like half-and-half). I sometimes add a little extra Parmesan cheese. Serve wit pasta.

    popping in here to say i made the chili honey chicken sheet pan dinner tonight and it was so good i knew i had to run back here and tell everyone. my entire family absolutely loved it!! with that cilantro jalapeño yogurt sauce, it was just so incredibly delicious and unique. I agree with becky, mine had to cook quite a bit longer than the 15 minutes the recipe called for. I ended up baking it for 30 minutes before broiling. I can’t wait to make it again. it was *that* good. thank you so much for all these incredible sheet pan dinner recipes!!

    Becky, I want to thank you. My mom passed away in November 2023. I tried to find time over the year to find time to write out my moms knowledge of gardening. Her farm had a football field in total of gardens. I miss calling and asking this or that. I found you on RUclips this year. Now it's not so hard missing her and having to ask. My husband and I can't wait for your new videos, we what together. Your smile warms and cheers our hearts. In the mean time we are watching each previous video.     Great recipes! We call these tray bakes in the UK (because we call it a baking tray not a sheet pan). I love these sort of meals, so easy and delicious. You can throw practically anything in there and make it any flavour. One of my favourites is new potatoes, fennel, lemon juice and pieces of salmon. 😋

      Sometimes extra work one day leads to less work the next. So also keep that in mind! This includes meal prep which means another day of not having to do as much!

    One of the secrets my aunt let me in on is that cinnamon is her key ingredient when making her Cape Malay style cooking. It adds a unique sweet smokey flavor that beautifully blends into most curry or savory dishes. A small pinch is all you need while browning your onions and toasting your usual spices.

    Great video. When you want to use your immersion blender instead of a food processor for a small amount, grab a tall thin jar or pint glass (like your canning jars) and it will make the ingredients go futher up your blender to get more purchase. Have a great day Becky.

    One of our favorite dinners is Kielbasa with potatoes,onion and we mix it up but ..carrots,zucchini, broccoli,small diced squash, green beans etc… kinda what’s on hand and roast it . Maybe biscuits or French bread on the side ..delicious and my kids (5&6) love it too!!

    The ingredients of sheet pan dinners tend to take different amounts of time, resulting in something being over done or some being under. I liked the idea of cooking the potatoes and the chicken for 20 min and THEN adding the veggie. Makes total sense!

    These look so good! My favorite sheet pan dinner is cauliflower shwarma. Also, my parents love a sheet pan dinner Alton Brown does where he cooks chicken on a cooling rack over a sheet pan full of sliced potatoes. The potatoes get crispy and fry in the chicken fat.

    5:41 The stick blender does better in a narrow container, so a wide mouth quart jar or a quart size freezer container works better than a bowl.
    Gotta love a good one pot/pan/appliance meal. =)

    Thank you Becky, I just made and ate the chicken thighs with sweet potatoes sheet pan. I added broccoli florets as that is what I had on hand. It was terrific, even without the yogurt sauce as my husband hates cilantro. You are a blessing. I also respect you keeping your baby son private and off you tube.

    Never thought about a sheet pan recipe before but jeez Louise! How simple is that?
    We're having to really look at our diet now at the hubs was just diagnosed with diabetes🙄. Roasting just might be the easy to go. Thank you Becky for the ideas

    Back in the day, my mother made sheet pan dinners when the schedule was hectic. Hers were more of a chop, season, toss, and throw in tne oven affairs. While things were in the oven she could prep another side, get a load of hand wash dishes done, get us to set the table, and be eating in 20-30 minutes. Typically she began with prechopped veggies or veggies from the freezer.

    Hi Becky, I am recovering from spine surgery and your videos what gets me through the day in bed along with a couple of Christian videos and churches. Your recipes are very easy to follow. I print them out and my girls (15 and 12) help me prep everything. I wonder for there is an option to upload pics of the meals we cook after watching you.

    I make sheet meals with the marinated meats in my freezer in the winter. It works great.

    I've been making my own Italian seasoning blend for years. Just equal parts oregano, basil, marjoram, rosemary and thyme. I imagine you have most of that on hand. I grow all of mine. Give it a try.

    Also boil your Cous Cous in broth instead of water after you roast it….GAME CHANGER!!!!!!! I bake a lot on sheet pans and roasting pans, so easy & time saving. Not to mention healthier to bake. Thanks 4 sharing!!

    For two of those recipes, the footage cut out before we had a chance to see your thoughts, which is a large part of the experience, and it seemed odd that it was missing. After all, watching you cook things and learning from what works is one of the many reasons we love to watch you.

    I use harissa for so many things! The harissa I buy in England has a small amount of rose water in it.
    I especially like to mix a small amount with mayonnaise and use it on my burgers and especially to dip my fries in! Sooo good!

    My favorite sheet pan dinner is teriyaki chicken thighs with red bell peppers and pineapple chunks! Glaze every thing with teriyaki sauce, bake until caramelized and serve with rice 🙌🏻 so good!

    Dont be afraid to Use your broccoli stem as well. Shred it and add it to salads or cook it with meal. It takes a little longer also you can spiralize it cook it in sause and use it as a crispy garnish topper

    I've been making sheet pan dinners for decades. I was a single mother of 2 kids and worked full time. Easy and healthy was critical back then. I still cook a lot of our dinners on sheet pans because they are still easy and delish.

    Hi Becky , The sheet pan dinners are my old friends during the cool months of the year . One fave of mine is peppers, potatoes , chicken thighs , whole garlic cloves , onions , oil , lemon and rosemary ,dry oregano , salt and pepper.. very Greek..I am going to make your recipe with the Harissa. I think you should be able to find harissa in the grocery store , you may have missed it . The product comes in all different types of packaging from tooth paste tube to small cans with all different tastes and heats...there is not just one type out there. I hope you can find some next time you head to the market. I always enjoy dropping by to see you.

    one of my favorite recipe for dips: Dill Cheese dip: 1 cup cottage cheese, 2 tsp. dill chopped, tomato wedges, cauliflower florets and potato chips
    Recipe Instructions: Put in your bender container of cottage cheese, blend until consistency is creamy! Stir in dill. Let stand overnight. Serve with tomato wedge and cauliflower florets or potato chips

    Hi Becky thank you for this video - it has gone on my list of recipes to try. I wanted to let you know about harissa paste - there are various versions of this but the real stuff has got spices in it which I think you would love - coriander seed, caraway seed, cumin and many of these are toasted before grinding and adding to the paste. This gives a completely different experience from just having bell pepper with some chilli.

    For some of my favorite tahini dressings, I add a little date syrup, honey, or maple syrup for sweetness. Perfect on roasted vegetables 👏👏👏

    Another fun sheet pan using sweet potatoes and kielbasa- add in things like green beans, black beans, onion- really anything additional from the garden would work. But toss all of it in oil, salt, pepper, garlic and CURRY! My sister and I love to make a curry sheet pan dinner and it’s always a huge winner. Add a little mustard maybe ketchup if needed and it it’s the most aromatic and savory/ sweet dish ❤

      I make a sheet pan of what I call fall veggies. I mix smoked sausage with potatoes, onions, acorn squash, brussel sprouts, and apples. Toss it with salt, pepper, and garlic, then roast it in the oven. The apple gives it a bit of sweet/tart and sooo good together. I've also tossed in some cranberries and pecans and made it as a "side" for Thanksgiving.

    I love sheet pan dinners! I have a set of silicone inserts for my sheet pan to make clean up easier. All the silicone dividers can be dishwasher safe.

    You can also put the hash in tin foil and cook it on the top rack of your grill. My favorite go to this summer with the weeks of 100+ temps was converting sheet pan meals to the grill.

    Oh Becky!!! My husband came in last night and was like, "Boy does it smell good in here"! I made the sausage meal the first night. I used the Beef sausage. Next time I will try a flavored Chicken sausage because the sausage cooled up too much. My fault! It was so good though. Last night took the cake though. I made the honey chili chicken with the sweet potatoes. We both sat at the table and ooh'd and ah'd...hahahaha... it was so funny sitting there with us both goingnon and on. He took some for lunch today and said the green beans were better the second day and the chicken was better the first day lol Who knows..he may have heated it up too long. Im making the greek one tonight I think. You make my dinners so delicious! I really appreciate you so much Becky!!

    Hello Becky and everyone. I cook with that brand of Harissa (hot) frequently it’s my favorite. I normally marinate with harissa, honey and lime and bake covered because I love the juice from bone in thighs. But wanted to say you could also toss the harissa mixture with potatoes or veggies after they are cooked. I have added just the harissa in hamburgers, and with meat balls I have a whipped feta cheese and naan bread or basmati rice it’s sooo bomb. Great video❤

    sheet pan meal are very versatile. If you want to do a half sheet pan size, you can. The cook time wont change much, just the quantity is smaller - which is great for single person meals.

    Hi Becky! Homeschool mom here😊 I always look for easy, quick, healthy recipes for my kids, and these recipes look amazing and I want to try them. A quick question, can I freeze them before I cook them, and thaw them when needed? If yes, how can I freeze them? Should I put the meat and the veggies in separate bags?

    Adding a fried egg (or scrambled if you prefer) and a sprinkle of cheese to the breakfast hash is really good, too.

      All the food network channel does is show games. They don’t teach you how to cook and new ideas in cooking , just have games and it’s boring and I don’t watch them any longer. I watch Becky. . Yea!!!!!!! I learn so much. I hope she don’t ever go that direction.

    Becky! I accidentally dumped a couple tablespoons of pepper in my little bitty batch of chicken salad for lunch. So I understand how easy that is. I ate it anyway. But it was peppery. I will be 60 in 2 weeks so there is no reason for me to make that mistake at my age!!! Love sheetpan meals. They are quick and easy and a lot less cleanup!!!

    I love sheet pan dinners & will definitely have to try these. If you need an idea for the leftover harrisa, try Nigella Lawson's Turkish eggs recipe. It is so good!

    You can make Harissa paste - I found the recipe online and it lasts a month in the fridge or you could freeze dry it/freeze it. It’s used extensively in Moroccan food - I do it with roasted veg on couscous

    Oh Becky! I love the look and sound of these dinners. I forget about making sheet tray meals. It's perfect for all the fresh veggies still coming in. Thank you for taking the time to show us all of these. If anyone has an idea for a green herb other than cilantro, I would love to know. Not one of us here care for it 😒

      Try a mix, like parsley, tarragon and green onion. And dill, if you lean that way. I wonder if watercress or arugula would work instead of dill?

      @Strattiffy Thank you. After I asked the question, I thought of chives and parsley because I grew those as well as dill and oregano. But the dill sounds very nice. I actually made the sausage tray with peppers, onions and butternut squash last night. I used honey, jalepeno and garlic. Was so good. I get excited with new ideas.

    Your food looks delicious and sounds delicious!!! I am still figuring out what spices go down well in what’s left of my stomach (I had gastric sleeve surgery) so everything is a learning curve. However I love to cook for my family I just didn’t enjoy being so unhealthy!! But I plan on trying some of these recipes!! Thank you

    I love how you are using the oven as a appliance for a meal. I know that England they use the aga ovens for so much more than we use our ovens. I wish we had more oven meals like this ! Thank you

    Love these recipes! Personally, I will add a runny egg(sunny side up or over easy) over top the sheet pan hash then drizzle with the yogurt sauce before eating. 🤤

    I make a similar sausage sheet pan recipe at least once a month. It’s so easy and so delicious 😋. Mine is just beef sausage, summer squash, and potatoes. It’s a perfect meal!

    Love your sheet pan vegetable hash, would be even more breakfast-y with a fried egg on top or a scrambled egg mixed in. Scrambled eggs are super easy to do in the microwave too, under 1 min 😊
