Better Call Saul is the prequel to the award-winning series Breaking Bad, set six years before Saul Goodman (Bob Odenkirk) became Walter White's lawyer. When we meet him, the man who will become Saul Goodman is known as Jimmy McGill, a small-time lawyer searching for his destiny, and, more immediately, hustling to make ends meet. Working alongside, and often against, Jimmy is "fixer" Mike Erhmantraut (Jonathan Banks), a beloved character introduced in Breaking Bad. The series will track Jimmy's transformation into Saul Goodman, the man who puts "criminal" in "criminal lawyer."

Most of the criminals who operate as “protagonists” usually have a line of decency that keeps them from being total monsters.
    Walt - Family
Gus - his workers / revenge
    Mike - family / principles
The Vet - caring for animals
    Kim - helping her clients
    Chuck - the law
    Salamancas - family
    Nacho - his father
    Jesse - no hurting children
…but it’s when that “line” gets cut; that the criminal is all they become.
Strangely, after Jimmy’s falling out with his brother, and no Kim in his corner…he becomes the apex sleazy lawyer.

German soldiers during WW2 - We were just following orders
People have a tendency to do these mental gymnastics, in order to disassociate themselves from the actual evild deeds & try to convince themselves that they had a reason, just not to deal with the guilty or remorse, they would feel otherwise.

Any good scene either has to advance plot or build character, and this one does both. Like Kim says, the vet knows what he wants and chooses contentment in his life over profit. It shows that, unlike Jimmy and Kim, he knows what really matters in life, and that he knows when to get out and quit while you're ahead. As for plot, we're now wondering what Jimmy took to make his pupils look like that and why they need it, how it fits into their little scheme against Howard. There's nothing filler about this scene at all.
