I made this greek white bean soup from the website first time a couple months ago and it has become a regular for our family since then. Even our picky eater kids like it - I guess due to the fruity flavor. It's always so comforting and filling.
Hey, just found your channel. But I have a tip for you: The reason why you were struggling peeling your eggs is because you put them into cold water first that you then heated up. If you want your eggs to be super easy to peel, put them into boiling water instead. This way, the egg protein will have no time to fuse with the membrane of the shell, which is precisely what happens when you heat it up slowly over time as you did in this video.

Likely, just use the ones that you know not to cause gastric flare-ups. Google, or check this channel's videos to see if he has an episode that relates. Gluten-free spelt / Oat flour with Almond meal perhaps. I've found Almond meal to want to stick to pans and have to use extra EVOO or AVO oil in the pan. I'm not gluten sensitive, but will occasionally bake GF. Plus, I grind a variety of whole grains to make rustic bread, pancakes, and occasionally cookies or other baked goods - that way, I know what's going into what's being made.
Please clarify how often the salad with egg would be eaten in the "real" Mediterranean diet. I see so many books with pictures on the covers of protein foods or even lots of recipes featuring the mainstays of the Western diet instead of lots more cooked and raw vegetables. But other supposedly authentic sources say one would eat chicken, fish, or eggs only once or twice a week.
Don't let that stop you. I didn't grow up with a processor, and didn't get one until I got married at 32. Use elbow grease - plus it keeps your arms conditioned 😊
My husband and I are both in our late 60's and due to health problems, we're going on the Mediterranean way of eating.

I serve them with the oranges, but I don't store them with the oranges as the peels can make the soup bitter after a few days.

If you’re peeling eggs like that you’re preparing incorrectly. Boil water first, add eggs, cook. Take out immediately and add to ice bath. Then peel
