Here’s #WhatMyKidsEatinaDay Breakfast: Apple Pie Oatmeal Ingredients: 1 Tbsp butter 2 small apples, peeled and diced Cinnamon to taste Sweetener of choice to taste Vanilla extract 1 cup water 1 cup milk 1 cup old fashioned oats Directions: Into a skillet melt the butter and add the diced apples. Add cinnamon, sweetener of choice and cook until softened, about 7-10 minutes on low medium heat. Transfer half the mixture into a bowl and set aside. Next add the water, milk, oats, cinnamon and sweetener of choice. Cook on medium low heat for 10 minutes or until the oats have softened, add more milk if necessary. Add the vanilla, stir and remove from heat. To serve, add some oatmeal into a bowl top with some of the reserved apple mixture and a drizzle of milk (optional) Snacks: @wonderfulpistachios and @dotspretzels Lunch: Korean Turkey Bowl Ingredients: 1 Tbsp oil 1 lb ground turkey 1/2 onion, diced 2 garlic cloves minced 1 inch piece of ginger, minced 1/4 cup low sodium soy sauce 2 Tbsp brown sugar 1 tsp sesame oil Sesame seeds and sliced green onion for garnish Directions: Into a skillet, add the oil and sautee the diced onion for about 5 minutes. Then add the ground turkey and break it apart as it cooks. Once the turkey is no longer pink, add the minced garlic and ginger. Cook for a few more minutes, add the soy sauce and brown sugar. Cook for 2-3 minutes. Remove from heat and add the sesame oil. Stir to combine. Serve over rice and top with a fried egg. Smoothies: into a blender container add 3/4 cup coconut water, a couple of handfuls of spinach and blend until smooth. Add 1 cup frozen pineapple, 1 banana and 1/2 small mango.
