      Happy New Year Judith. No need to keep the caramel in the fridge. It will stay good at room temperature for upto 1 to 2 months. If it hardens, you can add a teaspoon of water and heat it in the microwave.

      This quantity of caramel syrup is for 1.5 to 2 kg cake, so pl compute accordingly.🙂
