mine never comes out without sugar crystals. so i strain it and then its good but you make it look so easy ugh, but i wont give up cause this has helped me so much. i sell flancake so sometimes people want more of the caramel sauce so now its perfect cause i package extra for them. so i'll be pacticing a lot more. ty for this video
do you ever have a problem with the caramel getting too hard for flan? i dont know what i did wrong? there is a bit of caramel sauce that is on the flan but a hard disc of caramel is still in my ramekin???? i cant find any info on why this is... it turned to glass???

I just seen someone else use same 1 cup of sugar with 2 cups of water.. Where this one only uses little over half a cup. I tired one yesterday but just crystalized and was garbage. Going to try again.
I've tried this probably 6 times today, and still can't do it 😢 I've tried low heat, high heat, water first, water only after, hot and cold water, but nothing works! Either the sugar hardens when I add the water after the color changes, or all the water just evaporates from the very first sugar mix and it's a thick gooey mess and won't melt into a liquid no matter how much heat or water I add to it!
This should come with a warning. Since it's a sweet item you may be inclined to make this with your kids. Beware though, this stuff is worse than napalm if it gets on your skin while it's hot. Not only is it very sticky but it also has a high thermal mass. So in the event of an accident you're going to get serious injuries from it.
