Egg McMuffin Sandwich
one package of English Muffins
one slice of American cheese per English Muffin
one egg, per English Muffin, fried or baked
Canadian Bacon 
Spray ramekins with nonstick spray. Crack one egg into each ramekin. Pierce yolks. Bake in a preheated 350° oven for 12 to 18 minutes, or just until the center of the eggs is done. 
Meanwhile, cut open English Muffins and broil the English muffins to lightly toast the inside of each muffin. 
Layer the bottom of each English Muffin with a slice of American cheese, one cooked egg, and a piece or two of Canadian Bacon. Cover with tops of English muffins. Eat immediately or freeze for later use.
If reheating, open each thawed sandwich. Put on a baking sheet. Bake in a 350° preheated oven for 12 to 15 minutes or just until heated through. 
Bacon, Egg, and Cheese Wrap
one pack flour tortillas
12 eggs, beaten
1/4 cup whole milk
one small onion, diced
one small green pepper, diced
bacon, fried
shredded cheddar cheese
Beat together, in a large bowl, the eggs and milk. In a large skillet scramble the eggs, onion, and green pepper. Set aside.
Using one tortilla at a time, place one slice of cooked bacon, a generous scoop of scrambled eggs and vegetables, a second slice of cooked bacon, and a generous layer of shredded cheese. Roll up as you would a burrito. Eat immediately or freeze for later use. Serve with salsa and sour cream on the side. 
If reheating, place thawed wrap on a parchment paper lined cookie sheet and reheat in a 350° oven for approximately 15 minutes or until heated through.

I just had to come in here and tell you that I made this Copycat Egg McMuffin this morning! I even bought my first set of Ramekins to do this recipe. They were much better than McDonalds! Thank you for sharing. My husband loved them also.
My Husband’s name is Tom and he is a great guy! He loves my cooking too! I will make this for Sunday Breakfast for him! I never knew about a bad egg ….ya learn something new every day!

I would wanted my Canadian Bacon seared on both dides for the golden browning and ham jiuces. If you read the package it suggests you "pam Sear" the bacon.

I use an “egg ring”. It’s a round silicone ring with a heavy metal wire that sticks up. I place the ring in the fry pan, spray the inside of the ring then crack the egg inside. I break the yolk and cook the egg!
Me too, but making extra for freezer would be quicker in ramekins. Or maybe a muffin pan!

I have made my version for years. I toast my muffins, sear the bacon, use grated cheese, fry my egg to medium done. I love the yolk a little runny and I am not a big fan of American cheese. Thanks for your video!

I have metal rings with a flexible handle to cook my McMuffin eggs in. They work quite nicely and fit in a drawer for storage 😁
These breakfast sandwiches and wraps look wonderful. I love the idea of making multiple sandwiches and wraps and throw the extras in the freezer. Perfect for on-the-run mornings. Have one with a salad for an evening meal.
We bought one of those Hamilton Beech McMuffin makers and you just put everything into the different sections and after a few minutes it's all cooked. Of course your method makes a lot at one time but there are only 2 of us and 2 is all we need. Great demonstration. I have never made a breakfast burrito and I love how simple you made it. Thanks
Thanks for your comments. We are glad to hear you're trying the recipe. We froze our extras since there's just two of us now at home and we love having a quick but good breakfast so easy to prepare.
When an egg floats it isn’t necessarily bad. It has let more air into it but not spoiled. Since your cracking them anyway you will know if it’s bad when you do.
I’ve had eggs for months and never had to throw one out.
Tom just doesn’t trust them when they get to that point. We might be overly worried but once it becomes that porous, we will err on the side of caution. Glad it’s never been a problem for you.

Wow, I new nothing how to check for a spoiled egg like this? I'll have to do this often as we are huge egg eaters. Now you are using ramekins, so I can make a round egg for a individual muffin , you can get a regular round kitchen bowl spray with cooking non stick spray and microwave for one min, I just break the yolk with a fork and it slides right out. Like you I assumed it was ham too..a must try recipe

I make my eggs round by microwaving for about a couple minutes. I have plastic mugs with snap on vented lids. Eggs keep a long tome on the counter if they are not cleaned off till ready to use. I used to have chickens. Now my daughter supplies me with eggs. Those are good

I do NOT cook anything in plastic. Plastic is a by- product of petroleum and no one has been able to convince me to use plastic to cook or microwave in it. It leaches those chemicals into the food you are preparing and eating.

I make these all the time. I make them with Bacon, Sausage, or Canadian Bacon. I have egg rings I use on my griddle. I break the yoke inside the egg rings as they fry. I butter the English muffins and then toast them on the griddle as I fry the meat of choice. I take off the english muffins and lay them opened on the plate, when toasted I squirt a little maple syrup on both tops and bottoms, and lay down my cheese on the hot buns, then I put the hot egg on top of the cheese (to help melt the cheese), then the meat, then the other side of the bun. FYI, I toast or fry all my meat choices.

Tom I hate to critique anyone's cooking but I noticed you put the tortillas on the wrappings that they came in. That's a no no. Those packages have been handled by an untold number of people. Just a normal germ-a-phob here.

We scramble the eggs then put them in a microwave dish made especially for cooking scrambled eggs in the microwave. It works great.😊

Put the eggs in the ramekin and place then in the microwave for about 1 minute and you will get a quicker egg.

In making scrambled eggs I put a little milk as it cooks
I often add milk to mine before I start scrambling them. I like that it makes them softer.

There is around gadget I brought in my grocery store that lets you fry a round egg for a breakfast 🍳 muffin.

If it doesn't fit in the cabinet you might be able to find a little corner of your counter top. I know that may not always work, but then again it might.
Here in Canada, it's just "bacon" lol
The sandwich might benefit from being heated after assembly. Cold Canadian bacon is not tasty.
