      It means he is a pro in a way that he has a wide knowledge about that area, and he likes the stuff in many ways rather than prefers only one. Others meanwhile, with whom you could compare, like it specifically in one way, they prefer it that way because of their own reasons, not necessary bad, but would be better if they could explain and argument other methods as well...but then again, people who prefer one method is because for them it seems easier and result for them seems better, which...could or couldn't be either subjective or objective, it can depend from what you are doing. I mean, there are things you can do only in one way...so yea, just because someone would insist doing something in one way, means that the other probably doesn't know what they are doing in the first place.
      So basically it narrows down to what you are doing, and what knowledge you have about it in order either be like "yea, you can do it this or that way", or just be "nah man, you can't do it other way, because of this and that".

      In the meantime, Jun of Jun's kitchen can get you started. You basically just need some sharpening stones and a bit of practice. You can buy a cheap rusty knife and practice on that.

    I am a steak master on the gas grill. I've been grilling steaks with and for my family for about 40 years now. Even, I leaned some new tips and tricks today. So, a hearty thank you for having Kent as your guest. A huge thank you to Kent for his amazing advice, instruction and tips. We actually had Rib-Eyes for Thanksgiving this year so you know we love our beef! We often use the skirt steak, marinated overnight in a special marinade seasoned with kosher salt, fresh cracked black pepper, a bit of garlic and hints of cumin and chili peppers to make Carne Asada. Grilled, rested, sliced and served in a tortilla with my home made pico de gallo, (roughly translates to peck of the rooster or 'rooster bite') which has a nice medium spicy bite with a great balance between the heat of the peppers and the flavor of the diced tomato, cilantro, white and green onion and finely match-sticked radish (a long dice cut that looks like a small match stick and I slice the green onion into tiny little circles), fresh minced garlic and a squeeze of fresh lime (or lemon is ok too) I stir that all together with the diced mixed jalepeno/other hot&mild peppers and let it sit in the fridge over night with the marinade. It's a hearty, chunky salsa fresca so no cooking required. Just salt to your taste and it's ready but the flavors combine overnight and make it more flavorful. It's a great chip dip or topper for any grilled steak. If you want a creamy dip just add cruhed avocado and it's suddenly my guacamole recipe. For a milder version I add diced red, green and golden bell pepper in larger doses than the hot peppers but we like a good spicy medium heat here in the Arizona desert. It stays good in the fridge for at least five days but it never lasts more than two before it disappears. :) It's a lot of knife work so it's a special occasion thing and my family is worth the effort when I can take the time to make it. Like so many of our favorite dishes there is beef at the core :) Thanks again!

    Finally, a video where the guy tries to cook a medium rare and it actually comes out medium rare. I think I've watched 30 videos on cooking steak over the last couple weeks and this is the only one out of all of them that actually got it right.     For the red wine reduction there is a Binging with Babish sauce where he adds shallots, butter, and lemon
    Then the Fond forms after the steak add chopped shallots until they brown then add the wine until it reduces to coat the back of a spoon. Next add about 30 grams (2tsp) of butter. Then reduce until it becomes viscous then add lemon to cut through the richness.

      Recently made that pan-sauce with a nice slice of duck breast. Lemme tell ya, good meat with a good sauce and a nice drink is all a meal needs to be delicious (at least in my opinion)

      The Modern Rogue Thats awesome! Cigars sound like they'd be right up your ally.
      Once you've had a cigar you'll never go back to cigarettes. They don't make your clothes stink or give you lung cancer/other lung issues (because you don't inhale the smoke), and the smoke is so much more enjoyable, taste and texture wise.
      Pipes are also nice but there's a lot more equipment that you need, which is good for people that like the ritual of smoking.

      Actually in my experience its fairly common in the restaurant industry (at least in Australia) if youre in the weeds during service and youve got all your steaks sous vide (also a phenomenal way to cook a steak) just to drop it in the fryer for 30 seconds to a minute

      It doesn't do too much harm to the meat (it might overcook slightly but it gives a great, even crust) and its something that id reccomend at least trying sometime if youve got even a small deep fryer

    Kent really did an amazing job. I really like cooking and after watching this video I did a bit more research on my own. I like how he acknowledges that there are other methods that might produce good results, but the methods that he presented are a very consistent and time tested way to cook good steaks. I would say you will not go wrong doing it this way and after you mastered those methods you can try your crazy ideas ;)
    I also liked how he showeed different methods to achieve the same result (pan vs. broiler for example) and the last steak, where he purposefuly didnt get a perfect crust. Very< educational and good video.

      When you mix fuel, metal oxide and metal powder in just the right way, it burns at 2000 degrees Celsius. Hot enough to cut through nearly any barrier known to man. Throw some C4 into the mix, and you've got one hell of a combination

    I tried this cooking method with a $6 strip steak from Walmart and it ended up being one of the best steaks I've ever had. I also tried it with chicken breasts using olive oil as fat and sea salt, cracked black pepper and garlic powder crust. SO GOOD

      Thanks! It's usually such a simple step that can really enrich the viewing experience if people take the time to dig into it. We usually don't do things like the table of contents unless it's a super long video, but something like this video I like to think it really helps. Babish is great, we didn't actually use his video for any reference, but whenever I run across something that serves as a good complimentary video, I try to include it.

    Grass feed and finished. Organic. 1. *Sprinkle with salt(*light coating/both sides and edges. this will NOT be washed off and will penetrate the steak 100% ), set in a clean fridge for 12-24hrs(quick and easy dry aging), lil peppa, bring to room temp, grill to your liking. 2. Pineapple puree marination for 2-4hrs, rinse & dry, lil salt n' peppa, bring to room temp, grill to your liking. 3. Sous Vide! These ways also rock! Enjoy!

    That's awesome how he's using British sea salt for the finishing. Makes me proud.
    I'll have to try the lard or beef fat method, usually I just rub the steak in vegetable oil and salt pepper it before throwing it in the pan, works just as good but I think the animal fat might impart even more flavour to the sear.

    My dad's recipe for a marinade is 2 parts Italian dressing, 2 parts Soy Sauce, 0.5 parts hot sauce. Once you've marinated it, you take it out, lay it down, and season both sides with whatever you want (though I recommend the premade Italian seasoning mix you can buy in stores with freshly ground pepper and salt, as well as a bit of garlic powder and just a little little bit of rice vinegar to help the spices mix). Genuinely one of the best steaks I've ever had.
