Crispy Hot Wings cooked on Charcoal Grill

If you’re a fan of crispy hot wings but you want to avoid frying them, then you’ll want to try this technique. I combined corn starch with my bbq rub to create a light breading that turns the outside of the wings into a light crust.
It’s a simple technique that produces a crunchy wing on the grill. I set up my weber kettle with a charcoal vortex for high heat in an indirect environment. The vortex is a great accessory for any charcoal grill.
Place corn starch and Killer Hogs's The BBQ Rub in a ziplock bag, add chicken wings, and toss to coat. Place the wings on a wire rack to air dry while the grill gets hot. It took about 30 minutes for the wings to fully cook. Just turn them every 10 minutes or so for even cooking.
To compare the results I cooked some additional wings seasoned with just the rub. Both wings were really good but the crispy wings were more like a traditional hot wing. Once tossed in a Spicy Garlic Wing Sauce (recipe below), they went to another level. The crunch came through but you could pick up the flavor from the grill. You could use any wing sauce or serve them straight from the grill; let me know how they turn out after you give it a try.
Crispy Grilled Hot Wings
- 4lbs Whole Chicken Wings or Party Wings
- 1/2 cup Corn Starch
- 2 Tablespoons Killer Hogs The BBQ Rub
12oz Spicy Garlic Sauce *recipe to follow
Directions:
1. Separate whole wings into pieces by cutting through the joint with a sharp knife; also remove the wing tips from the flat portion. (skip this step if using party wings).
2. Pour corn starch and The BBQ Rub into a gallon size ziplock bag. Add wing sections and toss to coat.
3. Place wings on a wire rack to air dry and season with a little extra dry rub.
4. Set up weber kettle with a charcoal vortex accessory to create indirect high heat. (similar type grills will work with the vortex).
5. Fill the vortex with charcoal and light a fire starter to get the coals hot. After 20 minutes the grill should be ready to cook.
6. Place the cooking grate over the hot coals and arrange the wings around the outside close to the edge of the grill (not over the coals!). Place 1 piece of wood over the coals for smoke flavor.
7. Cover the grill with the lid making sure all vents are open 100%. Cook the wings for 10 minutes and flip. Continue cooking and flipping the wings as needed until the outside is brown and crunchy. Total cook time was about 30-35 minutes.
8. Toss the wings in Spicy Garlic sauce (or your favorite wing sauce) and serve.
Spicy Garlic Wing Sauce Recipe
- 6oz Killer Hogs Hot Sauce
- 1 stick Butter
- 1 Tablespoon Granulated Garlic
- 1 Tablespoon Honey
- 1 teaspoon Granulated Onion
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Corn Starch
- 1 teaspoon Water
In a small pot over medium heat melt butter. Add hot sauce, garlic, honey, onion, & Worcestershire. Stir to combine and bring to a simmer. In a separate small bowl combine corn starch and water into a slurry.
Slowly add corn starch mixture to sauce while continuously stirring. Allow sauce to come to a slight boil and remove from heat. Sauce will thicken as it cools. Use immediately on wings or store in an airtight container for up to a week in the refrigerator.

I bought this as my first propane grill. It's been a fun, learning experience ruclips.net/user/postUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . I think it's a bit too pricey after looking at other grills, but it wasn't hard to put together and it works really well. I love the side burner option for heating food during a power outage. I have an electric stove and live in the South (Hurricane season), so this was a bonus. I also bought a cover for it and it has protected it nicely (the Char Broil All-Season Grill Cover 3-4 Burner: Large). Every few grill sessions, I take the rack (or grate) and burner covers off and clean them with a non-abrasive scrubby and mild soap. I wipe the excess off of the bottom as well, taking care to avoid the gas and pilot lines.

I always do the cornstarch my wings with plenty of seasoning. I make my own pineapple buffalo sauce, just equal parts Frank's red hot and unsalted butter, a little crushed pineapple and the juice from the can made into a slurry with some cornstarch. It's also awesome on shrimp!

Malcom, I know this video is from a couple of years ago but I just stumbled upon it a couple of days ago. As luck would have it, I have a Weber Kettle and a vortex. We used your cooking technique and my wife and I were totally blown away. I believe these were the best wings I've ever had. We had two bags of Bob's Red Mill potato starch and I used that in place of corn starch. Add a little Cajun Shake and the rest is history. Thank you so much for all you do!

Try spraying the the cornstarch wings with some canola oil for an even crisper wing. I normally spray and then flip. Your AP rub is excellent for the breaded wings. The bbq rub doesn't have enough salt content for the breaded.

I just did the cornstarch wings on my Weber Q with a some of Frank's Red hot on before serving and they came out really good. My wife is now (encourages me) letting me (my wife let me change it;-) watch RUclips more. Thanks Joe
I grill them this way then heat up some Frank's with honey and butter. Toss the wings in that then back on the heat to caramelize. Delicious.

Thanks very much for posting! I used the corn starch on my wings for the 2022 Super bowl. My test with the two types worked well and provided enough evidence to use corn starch HOWEVER if the wings are not going to be eaten immediately, then this might not be the best version. Once the wings sit in the sauce (> one hour), the coating tends to slid off. Still were delicious and our guest enjoyed them immensely but i would make with corn starch only if going to be consumed immediately.
Just searched grilled wings for later on and was intrigued by the cornstarch ones. Definitely gonna try them out. I think I’ll pat them with some seasoning before tossing em in the starch.
Watched this video once and then tried the corn starch way with a little extra seasoning and my wife loved them. I tossed mine in a sauce about 3/4 the way through and after that last quarter on the grill they were perfect. I know the video is years old by this post but the method holds. Thank you sir.

Had to come back to this vid to say I tried the cornstarch on my grilled wings because of this video. Been doing it that way ever since! Never knew about that thank you for sharing. I recommend it to all my buddies to try, have a lot of fun with different sauces
Ran this recipe last night. I think you need about 1/2 a cup of cornflour (cornstarch) per kg (approx 2lb) of wings. And definitely shake off the excess as much as you can. Don't be cheap with the seasoning, you need a lot with the cornstarch. Mine took a little longer, it is amazing how much the ambient outside temp affects the grill temp. It was barely 6 deg C (40F) when i cooked these and i struggled to get the pit past 200C (400F) with a vortex full of Heat Beads and a chunk of Pecan. Definitely a winner, and pretty easy to do. Love your work Malcolm, you're a legend!!!
Gonna try this today. I've been using variations on your recipes all year and haven't been disappointed yet. I love crunchy wings, but I love the flavor of smoked wings. I'll probably do mine in a sweet bbq seasoning to add a contrast to the applewood pellets I'm using.

I saw him use that vortex on the Nashville hot chicken episode, and I don't have a vortex but some bricks in a triangle do the job fine for me. I wouldn't cook chicken any other way.

I’ve used the vortex for years. Tried corn starch and wow! Better than fried and way better got you.
I have found that if you mix the hot sauce with the wings, the crispiness disappears after 5 minutes or so. I prefer to DIP my crunchy wing into the sauce then eat it, it maintains the crisp with the added flavor of the sauce.

Bob Furlong let the wings cool down a bit before mixing them in the sauce, also cook them a little more crispier than when you may think they are done. You will not be disappointed
