Thanks for this Malcolm. I finally got around to doing this. For anyone who wants to try a modified version of this, here is what I did on my Large Char-Broil Charcoal Barrel Grill: 1.) Marinate wings in large zip-lock bag with 1 bottle of zest Italian dressing and one bottle of KC Masterpiece Honey Teriyaki Marinade for about 2 hours. I used whole wings where I cut the tips off myself. 2.) Season lightly as he said with your own AP rub (Kosher salt and garlic) and a store bought rub such as Famous Dave's Rib Rub (can get this at Walmart) on both sides. You can add red pepper if you'd like. 3.) Light 1 full chimney of charcoal. 4.) Dump charcoal on one side of your grill where the intake vent is (open to about 1/2 way). Add a chunk of .your favorite wood that you would use on chicken. 5.) Place wings on opposite side of grill away from heat. I close off my exhaust vent completely. This way, the smoke and heat builds up in the cooking chamber to where it gets under the meat and escapes under the lid. (NOTE: I like to make sure my wings are about room temperature before I put them on the grill) 6.) Turn wings after 45 minutes to an hour. Season with a rub such as Famous Dave's Rib Rub again. You can add red pepper if you'd like. 7.) After about another 45 minutes to an hour, the wings will be good, done and very tender. I just did a bunch of these when I cooked for my wife on her birthday. Her and the kids LOVED them!

Every Super Bowl I’m already told you’re cooking the wings. Every year I keep having to bring more and more and more chicken wings. Excellent recipe and yes you can sauce them afterwards.
I do mine the same way except at the last 15 mins I'll sauce mine with a 50/50 blend of BBQ sauce and Frank's or Tabasco couple shakes of chili flakes to kick it up. CHEERS.

Why is sooooooo much BBQ rub required. Man, a guy would spend a fortune just in purchasing enough of that rub to do 3 or 4 meat smokings. Experimenting with my own Rub. As long as you get the basic ingredients right, which ALL rubs contain, you can not go wrong.
You can find the rub recipe on his website. Look for the required tomato powder on Amazon. Well worth making. Do two batches because you'll be wanting to use more.
I cut the wings into 2 parts & let them soak into some salted water, To was out any of the Blood on & in them, Then drain them then I put them in to a zip lock Bag to Marinate, The washing avoids any Bacteria to set into them before marinating etc. Better Safe than Sorry etc.FYI Notice the Blood on the bottom of that dish that he is taking the Wings out of Not Good etc.

Why is sooooooo much BBQ rub required. Man, a guy would spend a fortune just in purchasing enough of that rub to do 3 or 4 meat smokings. Experimenting with my own Rub. As long as you get the basic ingredients right, which ALL rubs contain, you can not go wrong.
You can find the rub recipe on his website. Look for the required tomato powder on Amazon. Well worth making. Do two batches because you'll be wanting to use more.

I cut the wings into 2 parts & let them soak into some salted water, To was out any of the Blood on & in them, Then drain them then I put them in to a zip lock Bag to Marinate, The washing avoids any Bacteria to set into them before marinating etc. Better Safe than Sorry etc.FYI Notice the Blood on the bottom of that dish that he is taking the Wings out of Not Good etc.
Thats not blood, Blood runs in veins and coagulates after something is dead its impossible to "run" like liquid.
Thank you for this video- I have watched quite a few videos trying to find the right way to smoke chicken wings, and yours had the best explanations and step by step instructions of all that I have seen! My wings are in the smoker now- can't wait to try them!
