Except with rice, then it's Japanese.
It actually goes pretty well with an omelette, though that may vary with how much you put on it and the exact flavour and texture.
Personally, I feel ketchup goes better with fluffier omelettes. Not sure why.

Actually, I never understand the paranoia about egg shell contaminating the food, when people are fine with burgers that aren't well done. Also, I always wash the eggs before using them.

For fluffy omelette, I usually use two eggs; I seperate the yolk and whisk the white part into cotton-like fuzz before putting the yolk back and whisks until they mix.
I use a bit of olive oil and butter into the pan and heat it to medium. When I pour the egg into the pan, I stir it a bit. Maybe wait for a couple of seconds before rolling it.
