  • Expert chef Penny Stankiewicz from the Institute of Culinary Education and home cook Onika are trading donut recipes and hitting the kitchen. We set Onika up with $176 worth of ingredients and Penny’s decadent recipe while sending only a modest $11 worth of goods back the other way. To assist Onika with her deluxe dessert task, food scientist Rose dialed in to lend some expert advice. Which of these donuts would you attempt to make at home?

      Unfortunately it's actually for a much more lame reason than any of that. As soon as you put alcohol in your video it really tends to hurt your monetization. Good Mythical Kitchen has dealt with this issue quite a bit.

    First time I've Calamansi used on Epicurious. Citrus fruit from the Philippines. Taste is between a lime and lemon.

      @@LadyVader33 my filipina mother always uses them either to mix in meat marinate, add them to sauce dip like soy sauce with calamansi to partner with pork or fish, or make them into juice. It's not really eaten alone because it's very small. Well that is according to her.

      @@LadyVader33 We Filipinos love dipping foods in soy sauce and we add calamasi to add more tanginess. That’s basically it, we just squeeze a calamansi when we want more tang in our food like rice porridge, soups etc.

      Yooo! Filipino here! I have never tried calamansi in a doughnut! I have only ever had calamansi as juice or flavored into a muffin! Really great, tangy and citrusy in buttery baked, pastries! There is a similar citrus fruit like calamansi in Okinawa, Japan called Shikwasa, and it’s like calamansi too but more zesty and citrusy in taste!

      You can order it online for like $12-15 a pound. It's mostly gourmet food stores that'll have it imported.

    This is really well done for me, this lady instructing is easy to follow. Does she have a cooking show? I am not into sweets but learning why to do or not do something, she does a great job for my attention span, that normally gets distracted. Also enjoy the other lady's enthusiasm!

    I wonder if there is a coorelation between Penny having Polish roots and the fact that on Thursday is Fat Thursday in Poland. This is an age old tradition of eating as much doughnuts in one day as possible. It's completly normal for people to line up for hours in bakeries to buy traditional doughnuts by two or three dozens. Also a lot of grannies make them at home during that time. I was normally going over to my granny's house for a sweet feast but its my first year making them myself on Thursday.

      Isn't the pastry called pączek/ pączki? I follow a Polish youtuber (Karolina Żebrowska
      ) and she showed how they line up at different shops to fill themselves up. Kinda cool to be honest, wish we had that tradition here.

      @@lorenzorosales284 that's right, they are called Pączki. They usually come with fruit marmolade, rose filling or whipped cream. But now people get more creative with the fillings. So many different flavours to try! Last year me and my girlfriend tried 13 different flavours each. The stomach ache at the end of the day was a one to remember, but definitely worth it! :D

    Here in Vietnam we use calamansi in many dishes. We could mix it with fish sauce and sugar for a dipping, or mix with shrimp paste.
    Another use is making juice and sweets. You could mix calamansi juice with sugar or honey and ice. They are good in hot days. The warm juice with honey is good for sore throat, though. For sweets, we make candied calamansi, which is a popular sourvenir in Vietnam. They do wonders for sore throat.

    Chef Penny basically made the zeppole of Saint Joseph, a doughnut made in Southern Italy on the day of Saint Joseph, March 19th! Which it happens to be also my namesday! :D Also, as a person living in Sicily, bit proud to see the Sicilian pistachios! :D

    Have you ever done an Austrian style Krapfen? Basically a donut made with yeast dough and (traditionally) filled with apricot jam. Most bakers fill them after frying (less work) but they taste better if you fill them beforehand, because the jam starts to caramalize...

    Why not give them the recipe in the recipe book if rose/cast are going to end up giving it to them portioned out? I think it would be funnier if they actually only had the ingredients and no instructions. Any how, love this series!!
