All Chicken needs is flour, egg and then a second dip in flour. Buttermilk isn't necessary. Yes I get that where I'm from, that can be frowned upon but I was raised with Louisiana style cooking since that's where my Mom is from.

@@GrimmsDeath Buttermilk isn't necessary but for me it's the best fried chicken to me so far. Made it a couple times. Far better than regular fried chicken (again, for me. My preference).

Rhoda is just so charming and knowledgable. I'm really enjoying her increasing appearances on Epicurious, Condenast channels and of course in the BA Test Kitchen episodes with all the rest of the BA team.

My biggest fear is that Emily will become so knowledgeable about cooking techniques from these videos that she gets promoted to level 2 chef and we don't get videos with the trifecta anymore (they will start having to pick between Lorenzo and Emily since they won't need 2 level 2 chefs in one video)
I have no fear that the delightful Emily will be promoted anytime soon... bless her... and her ketchup.
Shes the only level 1 chef that makes it to the questionnaire, yes she is getting there.

My dad deepfried a whole turkey a couple of times when i was a kid. You get this giant pot and we fried it in the middle of the backyard . It probably was pretty dangerous lol.

@@Mia-he5si The way your dad did it is fairly safe, most of what gets people in trouble is if they try to fry it in the house or around other flammable stuff. Doing it outside in the middle of the yard is a good way to go.
The real trick is lowering the turkey into the oil without ending up in the burn ward. And the secret there is to be slow and careful and make sure the turkey is THOROUGHLY thawed before putting it in. Pieces of ice hitting hot oil is a great way to create geysers of destruction erupting out of the pot.

Nah Emily not only adds comic value to the video, but also represents a vast majority of the viewers;
Most people don't have 32 years of cooking experience, or a Master's degree in food sciences. So a lot of advice might be lost on us. So having a so to say control variable, helps.
I look back at the first few episodes and I rememebr enjoying this concept, however once the level ones started Flanderizing (in TV, it's the concept when a character becomes a caricature of it's own stereotypes, usually in a way that makes them flat and boring), the cringe fest started taking over the show.
Save the cringe for some 90's sitcom, I expected these new shows to learn from mistakes of the past.

More likely a sh***ty camera, it looks like it is focused on the backwall and Lorenzo is slightly out of focused and I think the camera has an algorithm to sharpen a bit which makes the two dimensions to look like being shot on different cameras. Also the lighting is artificial and unrealistic which contributes to the greenscreen look. You can uncover a homemade greenscreen by green tint on cheek highlights (they reflect the green behind) and blurry edges of the body resulting from imperfect lighting and imperfect keying of the background. Sorry for a long answer but I have never seen such a weirdly looking video so it made me think lol.

I'm so happy me question on reusing oil was included as its always been something I've considered doing but was never sure how safe it was

what i started doing that i love is to use a wet seasoned batter and then grind up chips( your favorite dorito!) and coat it with that and fry at a high temp. It does lose some of the flavor so if you want maximum flavor from the chip then bake it on a rack. i made chicken parmasian with nacho cheese dorito and takis and put on a nice parm+motz+prov cheese layer on it and baked it. i used a homemade tomato sauce and it was awesome! nice crunchy outside moist on the inside and the tomato sauce added a really nice complement. (my tomato sauce was composed of roasted onion,garlic, worcestershire sauce, basil, butter to roast aromatics, chicken bone from the thighs that i used, tomato paste, 1 fresh tomato, and 3 hours of cooking time.) make sure to put the sauce at the end on top of your already cooked chicken and pasta.
