    Three years later, I finally made this soup. Had a leftover piece of pork belly. Boiled it in the broth w aromatics. Then chopped up into small pieces. And since it was smelling so much like chicken soup, I threw in some thin udon noodles. DO make the garlic oil. A spoonful on top of your bowl takes this soup next level. Soooo yum!

    This was a lifesaver. I was initially skeptical about putting omelette in soup (?!) but made this yesterday and was blown away by how good the omelette pieces taste after soaking up the flavourful liquid! Just what I needed on a sick day. BTW, I used prawn stock and chicken - all's good. Thanks for another winner!

    We had this delicious soup tonight. Wonderful fragrant broth, the garlic oil was an added plus. The fluffy omelet in this soup is spot on. Definitely a ten all around. Thank you, Marion.

    I loved this recipe! Thank you! I made some changes though - I am Chinese and decided to give a Mandarin flavor to the meat adding 1Tbsp of light soy sauce, 1 teaspoon of sesame oil and a dash of white pepper to the meat. I also put a tablespoon of sesame oil in the egg mix and only fried it a very thin layer of oil, adding the sesame oil into the mixture added that deep savory fried flavor and added some fluff. Thank you Marion, it was delicious!

    Truly fabulous! The smell is incredible! I make this all the time.
    Your recipe inspired me to make egg “pasta”. 1 tsp water per beaten egg to lie flat. After it’s cooked, I cut the egg in strips to make spaghetti, linguine and fettuccini. It’s works great for me in your recipes with noodles.
    Not a fan of pasta substitutes of any kind at all, so this is a lifesaver.

    This is AMAZING!
    Super simple, super comforting.
    I live in Colorado mountains in a small cabin and eat a lot of soups and stews. I always end up making egg drop soup for breakfast. After making this I did an alternate version, same kind of recipe.
    I made the omelette with diced onions and peppers and used ground spicy pork sausage and added fresh spinach at the end:)

    My grandmother (chinese) make omelette soup but the omelette has Tang Hoon (thin vermicelli) so it's really filling :)

    What would be a good vegetable to add to the soup? I hate veggies but I soup is perfect way to eat them and mask taste somewhat. Cabbage? Corn?

    This looks so delicious! I have to try this recipe! Can I ask which chicken stock do you use? Or do you make it from scratch?

      I always try to test my recipes with store-bought stock because I know that's what most people will tend to use. But at home I love to make my own stock and keep loads of it in the freezer. I use a local brand of stock here in Thailand but as a rule of thumb I go for the most natural store-bought stock I can find :-)

    how long is the shelf life of the garlic oil?

      I usually keep it for about a week :-) After that the garlic seems to taste a little stale :-)

    What Oil do you use mainly in your cooking?

      I generally use vegetable oil, rice bran oil or peanut oil. These are all great for Asian food because they have a neutral flavour and have a high smoke point 😊👍

      😂😂😂It's true that most of my dishes are spicy! LOL. But this one is good for an upset stomach....pretty much the only time when I don't eat spicy food!

    Wow, I didn't think anything but hardboiled egg could go in soup, I've been proven wrong with that omelette.

    I followed the recipe, but the pork was kind of dry...the broth was alright but rather bland... I'm used to more flavorful broths in other asian cuisines. Overall, I probably won't be making this one again.
